How to make 1930's Spanish Omelette | Dining through the Decades Episode 3 Season 3

Hello Darlings and welcome back to another episode of Dining through the Decades! In this week’s episode we are making an English version of a 1930’s Spanish Omelette. It turned out surprisingly hot since I didn’t realise just how spicy Cayenne pepper can be haha! This was such a satisfying, delicious and easy meal to make and perfect for a quick lunch or dinner! Spanish Omelette - An English version of a Spanish dish! (1936)
4 eggs
½ lb. new potatoes
¼ lb. lean ham or bacon
Parsley
Spring onion
Cayenne or Paprika pepper
Slice the potatoes, fry them in butter and mix them with the ham or bacon, roughly chopped. Season with cayenne pepper and very little salt. Now pour the lightly-beaten eggs into the pan where the potatoes and ham are cooking and continue to cook until they are just set.
Turn the omelette out onto a hot dish without folding it, and sprinkle at the last minute with the finely-chopped green part of a young spring onion.

    Oh lovely! That's called Farmer's Omelette in Germany, where I'm from. The only things I do differently is add just a couple tablespoons of water to the pan when the potatoes cook, and let that cook off before I add the eggs and bacon. It helps them cook much more quickly and less sticks to the bottom of the pan. I also separate the eggs and whip the egg whites until they form stiff peaks, then fold in the yolks, which makes for a much fluffier texture. Yikes Cayenne pepper! That's too spicy for me. I only add salt, pepper, and a little curry powder, maybe some marjoram too (a lovely herb to use with both potatoes and eggs).

    @@RedRoseSeptember22 It is, it's how my grandmother taught me to cook it. The whipped egg whites especially make a difference. She'd also whip egg whites for making pancakes, or before she used eggs in a cake. It makes things so much lighter and fluffier!

    I feel like rhubarb flan would be interesting since I feel rhubarb is a vegetable that is easily forgotten about but has such great potential!

    I’m a firm believer in serving hot food on hot plates! I set my oven to 200F ( about 95C). You can fill bowls with hot water and put a plate on top, to avoid using the oven…. Would love to see bubble and squeak and the rhubarb flan. Great video, as always!

    OH it looks very tasty! As a Spanish (from Spain) is cute to see an omelette named Spanish 😊. In Spain, the Spanish omelette is just potatoes fried in olive oil and eggs (optional onion). And we call the scrambled eggs French omelette. Also, we call the omelette in general "tortilla", which is a different thing in America. It is interesting the variety of vocabulary about omelettes around the world :D Nice one Sage, thanks for the recipe! We are going to try and call it Australian omelette at home haha

    I would love to see Bubble and Squeak, and the Muffins for the sweet treat. 🙂 This looked really good , my grandmother made something similar she didn't call it a Spanish omelette,, lol... but she cooked the bacon off first, so that she could actually then put butter in the pan with the bacon drippings, then she would cook the potatoes and then she would add the eggs and she often put diced red pepper in it and let that cook and then right before everything was done she would throw all the cooked bacon on the top and a really good amount of some fresh shredded cheddar cheese... it was divine! I will try this version , ... yes I was thinking that, when you were putting on more cayenne pepper ..." Hmmm it probably doesn't need that , " . ..LOL. But you are adorable, your facial expressions!     My favorite thing about your cooking videos is the very natural way in which you adapt the recipes to be vegetarian friendly. It's the way I also do it, specially since my husband eats meat, so I love finding recipes that I can make the "normal" version and the vegetarian version!

    I’d love to see bubble & squeak, rhubarb flan, and the onion one. Side question, I’m in the US and this is new to me - potato pizza? Are the potatoes a topping? What other toppings are tasty with potatoes? I agree about uncooked potatoes, not many foods have a less pleasant texture. Always happy to see Mable and Maude, glad they are still giving you lovely fresh eggs. The omelette looked delicious, even with the generous portion of cayenne. 😂 Glad you’ve found a new household favorite. I love this series, thanks for another delightful video.

    Potato and rosemary pizza, sometimes with bacon, is a "gourmet" pizza at a lot of places in Australia, it's really yummy because double carbs and potatoes+cheese is always a winner too. It's often a vegetarian option (obv without bacon lol)

    Please do the rhubarb recipe! My nana planted a rhubarb bush in her garden 60 years ago. We now live in her house and it produces the most incredible amount of fruit that we just can't cook it quick enough or give it away. Love your videos by the way!! ❤️ All the way from the UK 🇬🇧

    Definitely one of the flans for dessert, they have the most potential for hilarious mishaps! Strawberry-rhubarb is VERY popular at least where I live (you won't really see rhubarb without strawberries, in fact) so why not try combining them in one recipe??
