How to make 1930's Sugar Apple Muffins | Dining Through the Decades Episode 4 Season 3

Sugar apple muffins (newspaper clipping found inside my 1930’s cookbook)
“This well-tried recipe wins a lovely pearl necklace for Mrs J. Richard, Inver Hotel, by Ballater”
You require two ounces butter, three ounces sugar, one egg, four ounces flour, one and a half teaspoonfuls of baking powder, quarter teaspoonful salt, quarter teaspoonful cinnamon, quarter teaspoonful nutmeg, half cupful milk and water, two ounces finely chopped apples, little cinnamon and nutmeg to dust top, if liked.
Cream the fat with two ounces of the sugar and beat in the egg. Mix in all the dry ingredients and add gradually with the milk to the creamed butter and sugar. Fold in the apples and fill greased muffin rings or round tins with the mixture. Sprinkle the remaining sugar mixed with a little cinnamon and nutmeg, over the top. Bake in a hot oven (218C/425F) for 20-25 minutes.

You need to let them cool fully so that they can finish “steaming” on the inside and develop a more crummy texture, just fyi! Love all your videos❤️

Don't fear the electric mixer, just start slow and gradually increase speed. One mistake like that is a learning experience. You know what not to do next time. The bigger bowl would have helped the first time round too. It's all a learning curve. Just like overfilling the tins following an old recipe is. They were tiny then compared to the modern muffin. Also, it was the depression followed by war the bits of apples (seasonal), butter, eggs & flour (rationed) were really stretched to a degree that we can't imagine now, for now.

I definitely thought that too, that our modern muffin tins would be massive compared to the 1930s. If you half filled them maybe? Or made tiny weeny ones using a mini cupcake tin, they're be so cute and would cook faster too.

I agree with not filling them as high. I remember making muffins when I was a kid and you would only fill half way. Her mixer seems silly fast. I hope she could find a vintage stand mixer, that would be perfect in her kitchen!
Start mixer on lowest speed, then gradually increase as your ingredients blend more. Blend it on counter opposite wallpaper for extra protection. Muffins looked great!! Will definitely have to try!! Thank you Sage!!

I always love your videos!!! Here is a tip my mom taught me for the electric beaters: put the bowl in the sink and mix there so if it splatters, who cares because it is in the sink!

I’m sorry for your loss. She sounds like a great person. My stepdad has cancer and it’s changed him from being super fit, to a frail old man in less than two years.
One of the best things I ever did was learn how to cook. (Of course there is always more to learn.) It adds so, so much to one's life to be able to be intimately acquainted with how one's food is made. I love watching you cook and learn!
I just made these. I beat the butter and sugar, then the egg, then gradually beat in the milk and flour mixture. All with an electric mixer. It fluffed up nicely and made 9 muffins. And they are much fluffier than yours turned out. I think that's what you were missing. Also I let them cool for 10 minutes before eating to finish cooking. Excellent recipe! I also doubled the cinnamon. :)
What I do at work is to start creaming the butter and sugar on a low speed (in this case, start it by hand) so it doesn’t fly everywhere, then mix it on the proper speed until its done. 😉
Hello lovely human ♥️ Baker here. A tip for baking! Things continue to cook after you take them out of the oven. That’s what the rest time is for. If something bready like muffins or cookies looks right on the edge but not totally cooked, let it rest. It will most likely “set up” during that time. And if not, there’s nothing wrong with putting it back in the oven even after it’s cooled!

As I've been watching your dinning through the decades I've been wanting my own cook book from the 1930's looking at various ones online and realising how expensive they are I thought I'd wait and save for one. Then tonight I realised that I actually had my grandma's old cook book. Researched it online and its from 1936! It's called cookery illustrated and household managemen. Will be a good read 😀
I purchased the same cookbook. I'm in the US, so I want to verify measurements since we use a different system. I read the Imperial system was used at this time...if I read correctly.
Hi Sage, I love your channel. You’re a pleasure to watch on your days back in time. I thought I would share a tip my mother taught me to blend the sugar and butter together with the mixer. First, beat your butter with the mixer for a minute or two to make it soft and fluffy, then add a portion of your sugar (1/3 to 1/2 of it) to the butter slowly while mixing to incorporate it into the butter. Once incorporated, add the remainder slowly until done. This method prevents the dry ingredients from flying up out of the bowl when mixing in the dry ingredients. I hope this helps. I’m going to try your recipe for these muffins this weekend. Very nice job! They look delicious.?Thanks for sharing.

I used to make applesauce muffins that were very good but I'm thinking that apple chunks will give them a different texture. Thank you for making this recipe - I voted for it - and am looking forward to making it. My go-to muffin recipe is one that I got from my husband's grandmother and it's over 100 years old and quite delicious. I always sprinkle sugar and cinnamon over the tops. That gives it such a wonderful texture and flavor.

I'm currently recovering from my 2nd total hip replacement in 8 months, this one wasn't a pleasant surgery or first couple of days, and your videos are really helping me through while I recover. I'm binge watching your channel and planning all the lovely recipes I can try when I've recovered. You'll make a lovely nurse, I wish you'd been there last week when I was in hospital- I feel you'd bring such positivity and be so caring and gentle. There were some real dragons on last week, including the first night when I was crying all night with the pain! Thank goodness that wasn't my first surgery or I wouldn't be back for the next one!

If u put a dish towel on counter than put your cutting board on it, your cutting board won't move it's a safer way to cut food

My mother taught me that every oven is different depending also on the altitude of where you live into how long you leave something in the oven. So, the fact that the muffins needed a longer time period to bake was probably for the difference between the oven you used and the oven that was used initially for the recipe. By the way, great job, they look delicious!

Start your mixer on lowest speed,then gradually increase the speed as everything blends in.... Let your muffins cool down completely,before you remove them from the tray,they will turn out nicely.
Those would make a yummy breakfast ♥ or snack hehe. I would've definitely doubled or tripled the recipe!!!

Two little tips, mixed butter and sugar together with a fork, and use an ice cream scoop to put into tray

Side note: Your opinion of how cinnamon should be used vs how it's written in the recipe aligns with my beliefs. Also, garlic; One clove is a joke , always at least two.

I noticed you used a modern muffin tray, in the old days muffin trays used to be a lot smaller. Even since I grew up they have got much bigger and I am only 34 years old. So that is one of the reasons why you could not make many muffins.
Woo hoo I made them & they were delicious! Thank you for all the great content & for someone who never did anything like this at all it was good to see someone making it real But I now need a 1930s-1950s vintage apron !! Have to see if I can find one in our charity/thrift shops xx x

I will make this recipe again for certain! I tweaked the recipe a bit, using pie spice instead of cinnamon and nutmeg separately. Will also add the apple in after the batter is in the tin so I can distribute them more evenly. :)

As spices and fruit were expensive back then, the flavours were very subtle. Also the size of the muffins were smaller. They probably filled half the muffin openings in the backing tray. You filled them to the top.

they look so good! Its likely that when you cut through with the knife it made it look like that. certain fry breads have that issue. you have to break them apart when hot or the hot knife turns it to goo

I learned in school you cream butter with a wooden spoon and gradually add the sugar as you go, not add it all at once

Oh, and in future, try mixing the cinnamon and nutmeg in with the sugar before you sprinkle it all on top of the muffins :) It works way better like that and infuses the sugar better

My. Mom made home-made donut dusted with sugar or cinnamon sugar or left them plain. She said her secret was cinnamon and or nutmeg in the batter. They were far an above store bought ones of today. Perhaps you could find a recipe from 30s-40s. Donut were a popular breakfast in the US anyway. Thanks for another enjoyable video. Of my cake or muffins don't spring back when lightly pressed with a finger tip, return to oven a short time. I turn off oven so as to not over dry the baked goods.

Personally if I'm doing any muffins I do the wet and dry separate then mix at the end and only mix till there are no dry bits and lumps are ok, this is the standard technique for pretty much all quick breads which most if not all muffins are. The mixing technique this recipe gave is more for cakes where a lot of the levening comes from whipping air into the butter. Most regular quick bread recipes use either oil or melted butter and all the levening comes from the baking powder. I feel like the only thing that makes this recipe a muffin recipe is the sugar content, which is usually drastically less sugar than cakes/cupcakes
