    Do not allow the temperature to get to hot because all the important compounds can be destroyed. When possible always purchase unpasteurized honey for this reason. Thanks for your channel I find it to honest,helpful and your web site adds context to your videos

    Using the double boiler setup helps to keep the temperature low enough that the honey does not overheat. There's a lot more info on the website. KZread is not my favorite place to post.

    Low and slow is the way to go. If you live in a sunny area, simply placing it in a sunny spot (where the ants can't get at it) may get the job done, too.

    Thank you very helpfully we have some buckwheat honey we purchased last yr and it is very tough an impossible to spread on bread now well be able to work with it tha ks to your video :)

    If you have a safe sunny spot in warm conditions, that may work, too. (We are at 40 degrees today with more clouds.)

    This got me wondering. If table sugar (sucrose) can be turned to caramel, can honey (fructose & glucose) be turned to caramel, too?

    Thank you for making this video. Curious; does it have to be in a pyrex glass jar? Unclear if that is a “real” issue when de-crystallizing honey.

    Any glass jar should be fine. You don't want to heat the honey in plastic. Honey is mildly acidic and will react with the plastic.

    How long will stay liquid before it does it again? I wonder if I put it outside in the hot sun on my hot patio table if it would work!

    Yes, if you have strong sun, that will work, too. We have a lot of months here in Wisconsin where it's cold or not very sunny, or both. Time to recrystallize will vary based on the honey and ambient conditions.

    You want to heat it gently. Do not boil it. It should not be building up large amounts of pressure. Canning jars and other jars that have been heat processed are designed to handle a fair amount of heat and pressure.

    Our sun is often weak here in Wisconsin, especially in winter, but sunlight is certainly a viable option if available. Just aim for gentle warmth.

    It depends on the degree of crystallization. You can give it a try, and if it doesn't work, try melting the sugar crystals in a pan with a little bit of water. Or you can use the crystals "as is" and treat them more like brown sugar.

    It depends on the honey and environmental conditions. Cooler temps will encourage faster crystallization. We usually finish up a quart jar before it recrystallizes, but we do use it in recipes, so sometimes we'll use a cup or half cup at a time.

    Hi Nexus, Honey is mildly acidic and will react with the plastic. Glass is best, a mansion jar if possible.

    If you heat the honey in a plastic container, you may end up with some plastic flavor in your honey. It'll still soften the honey, but I try to avoid heating in plastic if possible.

    I'd transfer the honey into a glass container (such as a jam/jelly jar) to heat on the stove. But if your honey in the plastic container is impossible to remove (like mine is), then you could put some very warm water in a bowl (you'll have to replenish the water every time it gets too cool) & put the plastic container in that to get the honey softer in order to transfer it into a glass container for heating on the stove using the method in this video.

    If your jar explodes, you're doing it wrong. You have your heat much too high. The water should never get above a gentle simmer.

    This takes 5 seconds to explain. Simmer in water but not too much so it’s pasteurized. Done.
