There are a lot of different reasons you would need to replace a rim or your spokes. Spokes can go missing or they might be broken or bent. Same thing with your rim, if it's cracked or badly bent you may want to replace it. This video demonstrates the proper way to lace a double crossover motorcycle wheel and then also how to properly re-lace the wheel with a new spoke kit and a new rim. No, they're the same.
Is there any difference in the rim or hub that call for the double cross pattern? Could I lace my Suzuki rmz450 rim to my old Honda xr hub if both have 36 spokes?

The hub for sure has. The spokes point out a certain way and the Honda spokes are angled. Not sure about the rim, they are divided/have pattern to divide the spokes to left and right side. I think they were in sets of two: 2 left, 2 right..
