Chef whats the difference between using the baking soda and without the baking soda? As i can see u didn't use any baking soda or black seeds aswell?

You did not put soda or yeast, can you please confirm if its not needed?

You can also knead in mixer This is an authentic recipe made by hand but nowadays a mixer has come. But it would be better to knead the maida dough by hand.

He is cheff Koch I don’t know where he learnt but he did not care for hygiene it’s a big problem in India every where in country they never use handshoes ,it’s street food os hotels and I think it’s what the govt should not allow every body to sale food in Europe you have to obey some laws ,that one can see in other country but not in India.
