Getting a good catch in training is relatively easy, but a good catch can be elusive when racing.
In this video, Ken describes and demonstrates a drill he's found helpful in helping crews maintain their good catches when it comes to racing.

    I'm a bit confused by the deep catches. So, I've always been taught to get the blades at the "correct depth" (ie where they would naturally float). And that if they go deeper, they effectively are acting in an arc, so therefore drawing the shell into the water, therefore creating more drag, (I suppose, only if you continue the upward motion with the hands, which I think would be hard to stop once you are burying deep).

    I think you are right. It’s also losing the speed of the catch, it last too long now. In the video you see in my opinion an indirect catch with losing length of the stroke at the start of the legdrive. Not making the catch at the point where it should be made. As the end of the recover. Especially the stroke-lady

    Yeah exactly, the spoon is the pivot point for the boat through the drive, so if the blade is buried too deep the shaft ends up below the surface as well. That underwater bit of shaft creates drag. If you measure the movement of the shaft through space during the drive you'll see that right by the gate it's moving the same distance as the boat, and right by the spoon it's not moving at all. Therefore the more loom you bury the drag effect gets exponentially worse. You can see the water sheeting off the loom as they reach the finish as a result of that drag. I was taught to bury the blade a bit deeper than normal when doing a racing start, because then the boat is stationary and you want the deeper blade for a very solid connection so you don't accidentally wash out, but I can't see what benefit it carries during a race piece
