LeAnne did 90 pints of pickled beet in 1976 my daughter thought it was time to pull HER beets up the night before !!! After canning the beets went to the hospital and had a little BOY !!!

Pickled beets are wonderful and a great fix for when there's not enough pickling brine. 👍
I enjoy your videos! They're so helpful and informative, as are some viewer comments. I just made a batch of pickled beets yesterday. It's considered a staple in our house. Instead of the cloves and cinnamon sticks, I was taught to add the equivalent of 1 tsp pickling spice per quart in a spice bag and steep that in the brine. I tend to increase the amount of brine I make to avoid a shortage, but then I never know what to do with the leftover brine. Thanks to viewer comments, I will start using it for pickled eggs!

LeAnne! This video should win an award. I love, love, love that you used running out of brine as a super helpful teaching moment for all canners. (And thank you, Linda of 2LeeLou for your input.) The last time I made pickled beets they had what was for me, waaaaay too many cloves which made them nearly inedible to my tastebuds. Looking forward to canning a new batch that is much less spicy this summer. Thank you for this great video and I hope it reaches many canners.

LeAnne I never liked beets until last year when I tried sweet pickled beets. I love them. Now I need to can my own. I am glad I found your video on how to make them because they are expensive in the store. Home canned food is way better than store bought too.

I love pickled beets, sweet are my favorite, but the spicy ones are good too!
Great job showing how to correct the situation of not enough brine. I can never no matter what I do get beets to not taste like dirt great job LeAnne.
I just made the same recipe couple weeks ago.
I love the smooth jars too. We didn’t grow up on beets but have had them a couple of times. I May just have to get some from the farmers market and try them. Great information about the brine too.

Oops. that has happened to me and I just made more brine and continued to fill the rest of the jars. The brine is already at the right acidity level. I will have to think on this some more :) Thanks LeAnne!

I love beets I could eat a whole jar at the time if I let myself lol. I canned 20 jars last year and ran out a few weeks ago, so my fall garden is going to be loaded so I can do more this year lol. I always double my brine when I start because I hated running out lol. Good to know I wasn't screwing them up! Oh, and I love the smooth wide-mouth pints!

My mom loved pickled beets but as a kid I was not fond of any picked foods. I loved pickles but haven’t tried beets so I need to. The process looks easy enough. Hey how is your husband feeling?

I've actually never tried beets. Growing up, Mother didn't like them, so I think I just assumed I wouldn't either. I keep meaning to try them.
Canned beats are the only way I like to eat beets lol
You can make pickled beet eggs if you have left over brine.

Good morning LeAnne! Oooooooo pickled beets. I like the older vintage jars because they are higher quality and never had any of them break. I need to get a steam canner I hear such good things about them. I really like your ring holder. Is that a paper towel holder? Very cool. Yes I love old vintage jars… they are so much heavier than brand new ones at the stores. Yes it’s a paper towel holder. It keeps me sane while canning. Less cutler for sure. God Bless you and yours!

I married Tom and moved here my kitchen is so tiny. I need help with space saving tips. So thank you so much. I cannot wait to get our house built I will have a big kitchen which any homesteader or farmer needs. PLEASE DO A QUICK EXPLANATION VIDEO ON NOT ENOUGH BRINE AND HOW YOU SOLVED IT. WOULDNT THE SECOND BATCH BE THE SAME ACIDITY LEVEL IF IT ISTHE SAME RECIPE?

Yes it’s steam canning. With steam canning you just need three quarters of water, if it calls for wath bathing and the processing time less than 45 minutes you can use the steam canner. Let me know if you have any more questions. I’m here to help.

30m minutes, Maybe I edited that part out, its the same for water bath or steam canning.
My beets have been coooked and frozen can I can then
I don't know why but it seems like almost every pickle recipe doesn't call for enough brine. I always just double the brine recipe, even then I sometimes run out. Ball's pickle recipes seem the be the worst for not enough brine. It's kind of frustrating. I'd much rather make a bit of extra brine (the ingredients are cheap) than have to stop part way through filling the jars to whip up another batch of brine.
