Sicilian eggplant. We Slice it up. Dunk in flour, egg, seasoned breadcrumbs and fry. Serve with tzatziki. Those long asian eggplants are great in thai curry or tourlou/briam, or even sliced lengthwise, dunk in flour and fry.

I also started my eggplant from seed. I had no warm up pads, but I do have a hanging grow light in my garage. I transplanted them little by little in larger starter pots as they got bigger. Three days ago they were planted in ground and doing Great!

Thanks so much for this informative video! So many things you mentioned were things I didn't know. I will have to start them inside next year. I will have to get a heat mat for the peppers anyway so I can start the eggplants too. I didn't have a heat mat this year for starting my peppers and they took forever to germinate!

An idea would be to take any clear plastic container and cut the bottom off neatly and press it into the grown around your seeded areas or newly planted seedlings. This will help block wind and radiate heat inside and the lid can be put back on at night before temps drop.

*The Cardboard "Jiffy Pots" were a great idea on paper, but II ALWAYS remove mine as well, when starting a transplant WHY ON EARTH give the roots more resistance? Good Call! My eggplants for the first time are about 3' tall and have several blossoms from top to bottom. I'm thrilled.*

I haven't even got mine in the ground yet-TX has a long grow season, so I'm not too worried. I do have one of the variety you planted here-Long Ping Tung-that I overwintered in a planter. When I pulled it out, it still had one withered little eggplant and two leaves hanging on it (spider mites). I removed the dead eggplant, stuck the whole container in my compost tea vat and let it load up, then sprayed it down really well with neem & kept it watered. Within two days I could see a big difference. That was maybe three weeks or a month ago. I've kept it watered, with an occasional weak splash of compost tea. It has six eggplants on it already and more flowering. They are already about 6 inches long. I had read about overwintering peppers, so thought I'd try it with eggplant. I got busy & kind of neglected it, but it survived better than my peppers and is doing really well! Strangely, after spraying the one time with neem for the spider mites, there is not a sign of them! The leaves are as healthy as can be. I will probably try to overwinter it again and see how it does with better care. Just a note in case anyone wants to try this with eggplant!

Kim, what a pleasure to find your videos! Great information! I'm interested in how you terraced that slope. Was that a DIY project or did a contractor do that? If DIY, what were the steps you went through? I have a slope next to my house (back patio, actually) and I'm interested in terracing it off into planting spaces. Not as steep as yours, but would still make great beds. Thanks! Good Gardening from Louisiana!

Same here in TX. I set up a portable tarp awning-I like cloth best though it's not as durable, but I am using just the plain silver tarps you buy at Home Depot right now. I grew tomatoes and eggplant all through the hottest part of the season here last year this way. I think we had about four weeks straight of 115 degree days. Then it cooled off & just settled in to 100 degree plus days for a while-sure you know the drill. :-D I have one Long Ping Tung eggplant I overwintered already with about 6 fruit and several more flowers. When I pulled it out it had two measly leaves and one long dehydrated fruit hanging on it-spider mites had made a meal of it. I removed the dead fruit, stuck it down in my compost tea and let it soak all day, then sprayed it down with neem (just left it in the planter). Big difference in two days, and that was about a month ago, and it is going great guns. I am thinking I will overwinter eggplants with my peppers from now on, as this gives them a really big head start. My plant is over a foot tall, with all that fruit and flowers already. Checked the fruits today and they are already over 6 inches long. (These get a foot or longer.) I know from past experience I'd still be looking at about an 8 inch plant with no fruit in a really good year otherwise. Hope that helps.

I grow 20+ eggplants every year. They like warm weather but not hot weather. Our summers here in Texas are above the 65° to 85° range. That is about what our night temps are. My eggplants pretty much shut down during the 100+° dog days of summer. When late summer/fall rolls around they start back making again.

Hi Jeff - wow, what do you do with all this eggplant, this is amazing! What varieties are your fav? Glad they stick around in the dog days and keep on ticking! I've found them to be extremely hardy here, and they usually survive the winter. Thanks for watching!

+CaliKim29 Garden & Home DIY I sell produce at my local farmers market.I only sell what I grow. Our market is a locally grown only market. The vendors are not supposed to sell produce that is shipped in from elsewhere. Eggplant is a popular item at the market. I grow Black beauty eggplants. They seem to be pretty heat tolerant. I just keep them watered during the really hot days to keep them alive. They bloom some during the heat but not much pollination. When the temperature stops getting above 90° they start back making fruit. I tried some Rosa Bianca plants one year but they didn't do well. As for cooking and eating eggplant, I like fried, casserole and baked eggplant. I slice them, sprinkle salt on the slices and stack them back up for a few minutes. Then rinsed the salt off before cooking. That draws some of the moisture out and they don't get mushy when they are cooked. I guess my favorite way is baked. Slice about 3/8 thick, lightly coat with olive oil, top with cheese and bacon etc., and bake. I enjoy your videos. You can check us out on Facebook @ Gibson's Garden

HI Jef - will check out your FB page. I bet people go crazy for your eggplant -Black Beauty is so productive too. How awesome to have a locally grown market where you live. Do you ever have to hand pollinate and if so, have you had much luck with it? I like the simple recipes the best - your baked eggplant sounds amazing!

+CaliKim29 Garden & Home DIY I've only hand pollinated pumpkins. Now I have a bee hive about 100 yards from my garden. This has helped a lot. I might try some hand pollinating on the eggplant during the hot days to see if it makes a difference. I was concerned about pollination in my high tunnel. I leave the ends open this time of year. The bees where working on my muskmelons yesterday so I guess it's going to work .

Kim, thank you soooo much for this video. What does it mean if my plants just keep turning yellow and dying i am on start numbers 3 and 4 . i am amending with chicken manure and fish fertilizer. Any ideas?

Hello PDD, sorry your eggplant is dying - so frustrating! It could be you have some sort of fungus in the soil where you are planting. I'd try planting in another area, or in a container with clean, sterile potting mix, you won't need to fertilize for a month or so with a good potting mix. i don't have experience with chicken manure, but perhaps you are using too much and burning the plants as well. Change it up and see what works best for you. Good luck - keep me posted!

+CaliKim29 Garden & Home DIY Yes, I did germination failed every time, I have seen only one eggplant in 20 odd years living here. There are very limited veggies that we can grow here. Tomatoes, potatoes, basil, chard, corn, beans, zucchini, squash, peas grows well. Our season is short, daylight is nearly 19 hours long most of spring and summer. Another factor is climate being dry and temperature drops to 10c or under within hours. This year I have included turnips, beats and experimenting on okra.

you can put a bucket over it at night to keep it warmer. i use clear buckets, with holes in the side, in the springtime so it can act as a mini greenhouse and get the plant growing faster.

I'm new to gardening. So this year is trial and error. Lots of KZread watching. We did plant eggplant but after your video I've learned I planted mine to close together. Should I leave for this year or can I transplant at this point?

Hi Jessica - congrats for getting started with your garden! Trial and error is the best way to learn! 2-3 feet is approximate. How close did you plant them? If they were recently planted in the past week or so, they will be easy to dig up to replant. Keep me posted on our garden! Thanks for watching!

Hello James, Eggplant will have a glossy sheen to them when they are ripe. Follow the tips I mentioned in the video and see if that helps. They do need a regular watering schedule, don't let them dry out when they are flowering and fruiting. Let me know how it goes. Thanks for watching!
