Interesting. I have used Kitchener stitch numerous times when joining stocking stitch ie sock toes but did not fully understand the offset until your demonstration.

It's not noticeable in stockinette (except at the edges) so many knitters don't realize it happens, until you go to graft a different stitch pattern!
