How to Fruit a Shiitake Mushroom Block

Growing Shiitake mushrooms is a whole lot different than growing most other gourmet mushrooms. In this video i go over a few of the key differences. In order to get the best looking shiitake mushrooms, you must become familiar with all the stages of growth as well as the environment they need to grow properly.
Once a shiitake block is fully colonized and white, it still needs 2 more months to popcorn and brown. Be careful not to disturb the shiitake block while it is colonizing or it may trigger premature pinning. fluctuations in temperature also can lead to pre mature pinning. Make sure not to use masters mix (HWFP + Soy hulls).because it is too nutritious. Here is the video to learn how to make the substrate i used in this video:

Once the shiitake block is full browned it is given a cold shock in the refrigerator or cold room over night to trigger fruiting. After cold shocking i also like to slap the block to trigger fruiting. It is then ready to be removed from the filter patch bag and placed inside a fruiting chamber to grow over the next 7 days. The temperature should be kept at 65-68 F.

    This video is right on time! First time shitake grower, currently with 4 blocks started from LC. I recently opened one block thinking it was fully colonized as it is all white. Thank you for the video.

    Always great!! Do you know by any chance if Pholiota nameko requires the same amount of mycelium-maturation? I've had blocks completely white, apparently ready to fruit but nothing seems to be happening. Thanks for all your videos!

    Yes nameko take longer to fruit once fully colonized. They also benefit from a cold shock to trigger fruiting. I would throw them in a cold room or refrigerator for 1-2 days and then fruit them.

    What is the wheat Bran percentage? What kind of hard wood?

    If it’s shiitake it could be normal browning but you will have to see how it progresses. It shouldn’t be fuzzy at all.
