    You can leave it whole. It does take longer and doesn’t get as sweet as I like it. But the benefits are there each way.

    @@Tiny.mountain.homestead hey I made some of those a couple of months ago I didn’t know if it turned out right The honey is not thick anymore it’s like it’s watered down and I didn’t burp the jar do you think it’s safe to consume it doesn’t stink of anything

    I usually pour some boiling water into the jar and rinse out. Especially if the jar has been sitting in the cabinet.

    Hello Tiny Mountain--- I made some of this with the weights and the self burping silicone lid/flats, and when I just opened one up it had some mold growing on the underside of the silicone lid from where it got very bubbly from the fermentation and the level of foam reached the top of the jar and then lowered. I have cleaned the rim of the jar very well and replaced with normal mason jar flats, but I'm wondering if this sort of thing is normal? Or, have you ever seen this before? I really wouldn't think fungus could grow on anything honey/garlic, but it sure did where it was once and had died. I was surprised to say the least. Thanks in advance for insights you might be able to offer.

    The self burping lid must have let oxygen back in somehow. Or maybe because it bubbled it let some in. Or the jar wasn’t clean. You could always boil the jar before using to make sure. I’ve never had this happen. I always try to leave some room at the top whenever I ferment anything as well.

    Sorry for the dunb question but after the fermentation is complete do you consume only the garlic, only the honey, or both the honey and garlic?

    Yes - could cause mold or bad bugs to take hold. Just fill a plastic bag with some water and tie a knot to seal it.

    If you want to create the good bacteria wait. If you want honey flavored garlic you can eat after a day. It just depends on what you want.

    Yes but you need to open it every day or more to allow gas to escape or it will blow up and shatter the glass

    Fermentation lids are easier because you don’t have to do anything. If you use a regular lid you have to open it once, sometimes twice a day. They call it burping the jar. Letting the co2 out.

    As it is fermenting I know the honey gets very dark but does the garlic form dark circles on it and also gets a brownish color to it. Almost as if it went bad not sure whether to use it or not been sitting for about 4 to 6 months.

    how you discribed your is exactly how they should be, we're sining ours well into a year old, and the cloves go very dark to black the longer you leave them and the honey turns into a syrup which both are delish, you can sprinkle some syrup on salads etc, the garlic we like to add to curry dishes, spagbol etc but finley chopped, hope this helps

    You can for sure. Fermentation creates good gut bacteria and also helps preserve it for months.

    Raw honey is ideal. However, any honey will ferment and give you the beneficial probiotics you need.

    It stops fermenting and loses its fermented goodness.. Why would you refrigerate something that'll keep for years?

    @@OldeVikingOriginal I would worry about ants. And other kinds of bugs too. Also, in certain season, fruit flies are a problem and no matter what I use and do they have not completely gone away.

    @@dbach7051 Yeah, that too. I always only use mason jars with tight lids and I'm absolutely pedantic when it comes to not spilling any of it outside the jar. I've been on this honey ferment journey for a bit over a year and no issues with fruit flies yet. I keep the jar inside a cupboard fyi. Ants, I wouldn't know, but no fruit flies here. Try an emptied Pringles can with some juicy fruit bits inside, be somewhat generous. Drape plastic film over the opening and poke a hole through it, it should keep the annoying suckers inside the house in the tube, and hopefully not holler any more inside. Close the lids when it gets uncomfortable to just hold the buzzy thing and toss it inside the house of the neighbour you hate. A few rotations of that and they should be gone. From your house.

    Hi. I eat a spoonful a day. I rinse off the access honey first. The fermentation process makes it sweet enough for me. Fermenting it this way increasing the amount of nutrients in the garlic and creates an amazing probiotic called lactobacilli.

    @@Tiny.mountain.homestead Other videos say to blanch it to keep it from turning blue … I think it has something to do with the garlic being too young and not cured/aged. Happens to my home grown garlic sometimes if I rush it. I don’t blanch mine. Hope that helps.

    Honey is not recommended under 1 year. My kids don't love it. They are 8 and 10. They do eat it when they need a boost of immunity though.

    Raw is the absolute best. However, it will still ferment and have health benefits either way.

    ​@@Tiny.mountain.homesteadTHANK YOU! Its litterally on the internet 1000 times that is has to be raw. But no reasons make any sense. The yeast (from garlic/air) would still break down the glucose/fructose in honey and the garlic moisture will still cause the honey to crystalize/separate so why wouldnt it ferment? I was pretty sure it would work but out of an abundance of caution i went looking for someone who tried it b4 i did. You have tried it with filtered/pasteurized honey right?
