Greetings from Canada! The lye water is a basic substance. I assume it is to neutralize the acidity in the citrus fruit? It is possible that this also helps preserve them for longer? It probably helps make them sweeter as well? Does it help preserve the colour and flavour? Great video, I learned many new things today! XD Thank you and Happy New Year. У нас эти шкурки опасно в пищу использовать. Для продажи цитрусовые идут с обработкой. Не знаю чем их опрыскивают, но эта ерунда даже кипятком не смывается
