    Brilliant loop method. I’m getting better all the time with the rolling out, but this idea is going to solve that funny pointy end I always get! Hanger method is my default method too…but over the ends of the kitchen chairs covered in a tea towel works well too. I use only OO flour but will try mixing in a little semolina as soon as I can acquire some. Thanks for a fun, informative and well executed video!

    Folding the pasta into a "tube" is positively the most clever thing I've ever seen on any cooking show anywhere in the world using that pasta machine. I'll never forget this tip as long as I live. Is this guy the Einstein of pasta making? I think so. Never seen Mario or Lidia Bastianich or any old grandmothers in Italy think of this.

    Yes but mario reveals genius in his cooking. And the grannies are marvelous-watching people with scores of years of practicing the art. Watching their hand rolling techniques is very useful, plus you grt wonderful glimpses of their italian kitchens and gardens. I love their pasta stations, and one granny has a cottage industry and uses wood-framed screens to dry the pasta, which is a damn sight better than the old hand all over the place method, which sucks in an apt. Everyone has a bit of smarts to contribute to the art. Thanks to all. 👨‍🍳

    Here's a tip that I learned from my mother when making pasta. Take brown paper bags and cut them open and lay them across your dining room table or kitchen table. As you make and gather the fettuccine, place it on the paper and spread it around evenly, so that it is all gathered together and it will dry quicker. Once dried, place the dried fettuccine in a brown paper bag and put it in your pantry or storage area. If it is dried properly, it won't get mouldy. Plus, the paper bag is better than a plastic zip lock bag (my opinion), as you are not trapping moisture in a contained environment. Great idea with looping the pasta.

    what about other pasta types( orechiette for example?) how can i perserve these? and how long can i store it? isn't it risky because of the raw egg?

    I learned two marvelous things from this video: one, how to loop the pasta in the machine so that it makes a continuous sheet, although that looks quite hard to manage as it goes through the rollers. Still, I would like to try that. Second, making small nests (italian 'nido') and then freezing in zip lock bags. Brilliant!

    Finally! This is the very video I have been searching for! Great information, straight to the point and no worthless chatter! Thank you for making this video. I am saving it for future reference until I get the steps down pat. I do like the idea of freezing the noodles. I can't believe I didn't think of that on my own as I already have a favorite store bought noodle that I normally use but the costs have gone out of this world lately. I have hens who roam about and plenty of flour, once my pasta maker gets here I am using your video to make some tasty noodles and then freeze them! Thank you, Hugh Amano!!

    The loop!!! Genius! I bought a pasta maker a few weeks ago and just got around to using it yesterday...so much fun and tastes amazing! I'm going to try the loop the next time. I made eggless spelt tagliatelle, and I added some nettle powder in with the flour, yum yum yum!!

    I gotta say I prefer to wait for 20-30 minutes after I work the dough out to let the gluten develop, but I really liked the way you open it in sheets in one "circle". fair play for the video!

    I was delighted to see you use the hanger for drying! I do also but using a pants hanger so several "rows" at once and "hang" it sideways. Another way of drying is to loop them over the sides of large cooking pans. I also appreciated you showing the looping of the dough - I'm surprised I did not think of that, it is so clever and saves so much work!

    Me too! I also set up two cookie drying racks…the kind that have little fold out feet so you can stack them…I set them up on edge and use rows of dowels to hang my pasta onto. Also,the backs of the kitchen chairs I cover with tea towels. I tried the nests too and they work fine.

    Great video! I've made pasta before and want to do it again. Mom gave me her pasta machine. Good idea the way you wrapped the dougb around so it doesn't get long and hard to handle. Making pasta tomorrow.

    My slow OCD brain hated this. But I've been watching EVERYBODY'S pasta videos and am picking up a LOT of tips. From the 'use your intuition' chefs, to the 'exact measurements' chefs, and now the 'let's cut some corners and go super fast' chef. Great video, thanks for the help!

    I use an Arcosteel pasta maker, serves me now for many years. Never thought about making a loop! What a great idea. Love making my own pasta, sometimes I add herbs or spices, spinach or tomato paste. And always some e.v.o.o. into the dough. Thanks for sharing your tips.

    This machine is really great for when children are helping. One can turn the handle while the other works the noodles, then switch. They love it. Hint: This machine also make a thin pasta almost like angel hair noodles, but the KA attachment does not. I have both and honestly prefer the hand crank model. Irony here: When my children were little, this machine was in the Sears catalog for $35. That was so beyond our meager budget, I kept rolling my noodles with the rolling pin. Decades later, I found the same machine in a local kitchen store for $35! I bought it not believing it was still the same price, both were the good quality (made in Italy) machines. Do be aware there are cheap versions of this around so be sure to get the one made in Italy.
