    Everyone says that you should put sourdough out before you go to bed, but if I do that by morning, mine has risen and fell and isn't active anymore. Mine is usually ready in 2 to 4 hours. Any ideas why it's ready so fast?

    That’s interesting! The two things that come to mind for me is 1) If your home is fairly warm or humid 2)You have a rockstar starter that doesn’t need to pussyfoot around it is just ready to go. 😂
