    WOW I didn’t realize celery salt was so simple to make. Which I use often in my cooking. I just found your channel so I’m looking forward to learning more from you. I’m 63 yrs young.     To get the absolute most out of your celery harvest you can use all the bases of your celery for broth/stock, leaves can also be dehydrated as a herb in their own right which makes a great addition to seaning mixes and dry rubs. If you dehydrate equal quantities of carrot/onion/celery you have Mirepoix which can be powdered and we use a lemongrass pickle recipe for the tender central stems that we blend and use as a spread on toast.

    I had several bags of veggie scraps and bases to make stock in the freezer then a storm came and we lost power for 4 days. Had to throw all out including all the parmigiano ends. Compost happens.

    We don't blanch our celery tops for the freezer. I just pack them in bags and then grab what we need when making broth or for putting in a chicken/turkey cavity to roast. We also freeze our celery stalks chopped/blanched, flash frozen and pack in bags to the freezer. When making soup, we grab what we want and it's like you put fresh celery in soup. Can't wait to try celery salt this coming summer, thanks for sharing!

    I would have definitely save the celery stalks that are extra that you didn't dry and freeze them to use it in soups or making broth

    Great video. I wonder if a bit of lemon juice would preserve the color better. I vacuum seal my dry stuff with a moisture absorber...just in case

    Celery leaves are great for adding to soups or stews. If you don’t like leaves in your soups you can just add a bunch in a batch of bone broth. You scan then skim it out with the bones.

    Hi, really interesting video. I've been making celery powder & salt from dehydrated leaves and freezing sliced celery ribs all winter from my California garden to preserve my amazingly enormous crop this year. 🎉 Homegrown celery is much better than store-bought -- the flavor is more pronounced and leaves abundant! But I do have a question -- why do you blanch your sliced celery before freezing? I do blanch other vegetables like greens, summer squash and green beans... but not celery. Maybe I should be? I'd like to share another vegetable that's great to powder as well, and would love to see you create a video on it if you think it worthwhile.... Powdered green onion tops are SO DELICIOUS! I remove the tall green tops of the onions in my garden that fall over naturally (leaving the bulb in the ground to continue growing) as they no longer nourish the plant. Of course, wash well -- I soak the tops in a water bath with a few tablespoons of white vinegar for 20 mins or so, then cut into one or two-inch lengths and spin dry. Short pieces dry a bit faster in the dehydrator (I use a round NESCO unit that looks very much like yours and I love it). The resulting powder has a lovely, mild and almost buttery flavor that is great with eggs, salads, soups, well actually everything! It's flavor is more mellow and rich than the bulb so it doesn’t need to cook long -- I love to sprinkle it over cooked dishes as well. I've given so much of it away as my family and friends are always impressed with the lovely green color and enticing scent of the powder. I plan to try powdering garlic stalks next as I have about 100 plants in my garden right now! You have such a nice, pleasant and clear approach that I'd love to see you do your take on a video if it interests you. Thanks so much! Best of luck to you on your channel!

    Soak veggies and fruits in salted water for about 10mins then rinse well. The salt will kill those small bugs we cant see

    I don't know why but I never think to dehydrate celery but I love it in soups. So thank you for that! But please for the love of god, unplug that blender before you put your hand in. lol.

    I've done both blanch and not. Blanching comes out horrible. It turns it a dark green and it tastes sweet. If you don't blanch the colors stay natural and it actually tastes like celery. I don't recommend.
