Thanks for the great tutorial! If anybody is looking for a good cheap knife, you can find the Update International KP-10 10" Cimeter knife on Amazon which is the perfect length butcher's knife for taking down any primal cuts. Make sure you pickup a combination Japanese Waterstone for sharpening as well! 250 grit + 1000 grit for starters. You can get a 6000 or an 8000 if you feel fancy.
