How to Cultivate Millions of Golden Vegetable Buds in Dark Room - Belgian Endive Farming and Harvest

Among the numerous vegetables grown by farmers, there is none quite like Belgian endive. Also known as witloof - which means “white leaf” in Dutch - Belgian endives are a long season crop that requires a winter, indoor “forcing” phase to produce tightly-wrapped, almond-shaped, cream colored heads. The process has several steps, but in the end is delectable harvest of pale, crunchy, nutty, delicately bitter-tasting fresh greens in the winter months.
Growing Belgian endive is a two main step process that straddles the seasons. The first step, which begins in the spring, is to cultivate Belgian endive in the field for the tubers. The second step, which takes place in the late fall and winter, is to cultivate the heads, called chicons, indoors under moist, dark conditions.

Right I've never heard of, or seen this before
I'm quite fond of Belgian Endive. I successfully grew it for the first time this year. The size of the roots surprised me. I put them in the root cellar in moist sand, and got three harvests of the heads. I'll grow quite a bit more this season. I may take the spent roots and try roasting them to add to my coffee. Chicory is such a versatile plant, much like mustard in its variety of cultivars.

The endive bud has a pleasant bitter-sweet flavor. It's my favorite raw veggie, but is rarely found in our Arkansas USA supermarkets. Those "tubers" are actually the taproot of the chicory plant, and can be ground-up, roasted, and used as a nutritious and bitter-sweet coffee extender. Chicory coffee is most popular in the southern US. Wild chicory grows abundantly here in northwestern Arkansas USA, but the ONLY place I have ever seen them in the wild is along rural roadsides. The mature plant is about a meter tall and bears beautiful little sky-blue flowers much the same size and shape as flowers of Dandelion, which is in the same family of plants.

The aroma of chicory goes well with coffee. I have used it in a ratio of 1 chicory root/3 coffee. There is wild chicory growing in my yard, where it thrives and spreads by itself. (I live in Finland)

Chicory coffee was common in the civil war and the depression. When real coffee was scarce. So the old timers told me. I wasn’t there.

Also well-known in the Netherlands ('witlof') where I'm from. I've grown this myself (in Canada) - quite a bit of work but well worth the effort. Delicious as a cooked vegetable.

Здравствуйте всем! У нас в России тоже растет дикий цикорий. Но вы супермаркете продается цикорий как кофе. Я иногда пью размешиваю кофе1: цикорий 1. Но здесь выращивают кроме цикория в поле,другой овощ в теплице,похож на артишок. Земле нужен мир, продукты питания люди сами вырастет. Живите дружно люди!

Martha Stewart has an endive and walnut salad in one of her books. Saute up some cut walnuts with walnut oil, and a dash of pepper and red wine vinegar and it is delicious. I like it with a pasta dish.

I had endive once at a hotel lunch buffet years ago. I loved it. This veg is not popular in Indonesia. I think it's imported.
