    I _still_ judge the authenticity by that! Lol. Nothing like good greasy cheese steak! Lol. When I was little, I honestly never knew why you could see through the bag. I always thought *all* cheesesteaks were like that and no one ever explained to me that it was because of the grease until Will Smith did in that fresh Prince episode. 👍

    I don't know what is so hard about making a cheese steak sandwich; but I can tell you that outside of Philly, nobody does it right. There is something to be said for doing something your whole life, that you learned from your father, who learned from your grandfather. I've given up looking for a good cheese steak outside of Philly.

    Tony Luke’s is also in NYC, as well as Fedoroff’s. I think for most people, part of it is also nostalgia. They have a particular flavor they grew up with, so they swear by it. I know I’m definitely like that when it comes to certain fast food spots here.

    I really appreciate different takes on food. I can appreciate not over-cooking thin sliced steak to dryness but I also love the Umami of browned beef. To me the perfect steak in this case would combine both. Maybe a quick flash on high heat to brown? Also I like the idea of adding salt only at the end. Primarily for basic health reasons. Salt hides itself in food. It is often alot healthier to just add a bit of salt at the end. You get the same enhancement without the excess...

    In my opinion you can ignore his advice and sear the meat even if it causes the meat to be a little dry. It can also depend on the beef. Some batches of beef seem to taste better when seared for sandwiches. Try it both ways and see what works

    I grew up around Philly eating cheesesteaks my whole life. As soon as I left the tri state area I quickly learned how hard it is to cook a good/great cheesesteak. Every time I move to a new city I research what the best/most popular Philly cheesesteak places are and they literally all pretty much suck. Even the generic pizza place in PA that isn’t known for cheesesteaks but makes them is leaps and bounds better then anything you’ll find west of the Rockies.

    Philly native here, tony lukes it decent but its not great. Look up Johns Roast Pork, woodrows or campo’s deli, those are my favorite spots for a REAL cheese steak

    I can see what you mean broski but a lot of that red coloring is just dye when you buy it, it fades after a day. It looked like it had a lot of grissle/fat on the top layer tho and thats what gave it that color.

    Been eating legit cheesesteaks since I can remember. Original Tony Lukes(not including chain locations) are VERY good. I know Jim's is known as the best. I won't get into who's better than who. But the real Tony Luke's is extremely good and hangs with the best of them. Anyone bashing the color of the meat, obviously doesn't know what happens to beef when stacked and deprived of oxygen. It's not BAD at all.

    @andy I think what you're not seeing is that the color simply looks different when the meat, grease, onions, & peppers (& maybe some mustard, not sure) are mixed & cooked together. It really just looks different for that reason.

    As Mr. Luke shows here, a lot of cooking comes down to simply caring about what you're doing; using good ingredients, cooking at the right temperature, not walking away to talk on the phone or whatever, seasoning at the right time, being patient etc.

    I've never had a cheese steak from Tony Lukes before, and I am born and raised in Philly. But I did have their Chicken Parm sandwich, and omg is was amazing. I don't trust a lot of places when it comes to cheese steaks. But the best cheese steak I had, was at Kensington and Lehigh, on the corner. They use to sell 2 foot cheese steaks for about $10 back in the day. And they use to open at like 4pm and stay open all night until about 6am. I think the place was called Luckys, it's called something else now though.

    A lot of instructional videos convey information which is exactly what I was looking for. But this guy? This guy made me feel like he’s explaining why I’m about to taste the best sandwich ever, then I wake up in a cold sweat at 3:19am and realize it was just a dream and that the actual nightmare will begin when I wake up at 7am for work and boil a package of 25 cent ramen noodles 🤮

    Yes! Do not salt the steak until it's cooked because salt draws out the moisture, and you want the meat to be moist while you're cooking it. Great tip!

    im all about the higher heat baby get that steak on and off in a minute. as long as you keep that thing movin you dont gotta worry about no dry or loss of flavor

    Well yea... He's just plain wrong. It's juicer when it's room temp then seared to keep everything nice and inside the steak. It'd take 2 min and it'd be juicer

    @@jamesvela7820 It also should melt the cheese on top quickly. You shouldn't have to flip the cheese on the grill. Made the Philly look like a total pile of slop after he did that.

    Cooking the meat slow essentially “steams” the meat. You want to brown the meat quickly. Ribeye has too much fat to dry out. And never add salt at the last minute. Thats all u will taste.

    When I create Philly cheesesteaks I generally use fine brass and usually some scrap metal for the ultimate finished product.

    I like how you roll. I'm studying the preparation of a good PCS and it's interesting to see how you recommend cooking it slowly whereas other recipes talk about cooking things quickly. I see a LOT of experiments in my future and I look forward do doing so with your technique!
