    Thanks for the video, Scott. This is at least the second of your fish videos I've seen. (I think it was your mackerel video I saw.) I'm not even much of a fish eater. (Mild seafood allergy.) But, I've been cooking for my 86 year old mother who loves fish. I've been able to take your videos and actually cook something immediately with them. A really big help.

    Looks good. I just caught a nice Ray Last week. Skin it, then marinated it in Tabasco for about 10 mins. Lightly floured then fried. It was very good. This looks good too. I am a big eater of wild caught foods.

    a chef tip: use less butter (for health reasons) and more capers and parsley (for taste) and when u cook the butter put a spash of lemon juice or vinegar just b4 the fat turns black.

    Ray is one of my favourite fish but I like it cooked the way an old Cornish fisherman taught me and that is after skinning fry it in very hot fat

    That butter sauce is awesome man. I could think of a thousand things to use it on. Im going to have to save my pennies for some lobster or crab legs. I fried some ray wing the other day but enjoy it more poached after trying this recipe.I had it with a southern kingfish and some mustard greens. This is the artist formally know as the "thebrokefisherman" btw. Google and youtube got screwy when I logged on from my pc and forced the name change. lol

    Oh man, it really doesn't need to be swilling in butter like this. About a 10th of that used would be just fine. It's making a lovely healthy meal into a lard fest!

    You should show how to clean the skate I would try this. We catch them alot along with sea robin and always through them back.

    ok man, im up for that, do you think you went a little far with the poaching (that aint a knock because I didn't eat it) also what would you say would make a nice accompaniment for presentation purposes if I was to say just have one small wing pp as a fish starter. Cheers for any advice mate.

    Yeh, nice. I heard that there is an ideal window of freshness for skate; if you cook it straight out of the sea it can be a tough - the material that turns into ammonia does in the first few hours tenderise the meat, but as you say, leave it too long and it turns nasty.

    Butter is good for you. It's not like he's drinking it every night. Stay active and you'll be ok. Just like eggs, butter has the good fats that assist brain function. You folks are the same food police that thinks sea salt is bad for you. Vegan's go whine about something else like leather shoes or something. Thank you Scott Rea for the English Style recipe.

    Good recipe: (1) The vinegar will neutralize any ammonia, however slight; (2) the poaching avoids the meat coming apart and sticking to the pan (which is a danger of frying). Question: (1) How "brown" can butter become?; (2) does anyone every use a cream sauce?

    Dunno how I got to eating stingrays but this looks amazing.... more so probably because I haven't eaten in three days.... yeah... if you have a disability that makes you unable to drive, plan out grocery visits BEFORE running out of food. I've still got ketchup and mustard thank goodness.... even better is grocery shopping tomorrow.... and I hope I can find stingray!

    Do rays and skates have bones? Rays and skates have no bones, but instead have skeletons made of cartilage as do sharks. Cartilage is tough and fibrous but not as hard as true bones. You can eate it.

    Sorry for the late reply will,thanks for the comment mate,call it a cheap plug,but check out my zander cooking video because i poach that in a court bouillon,which is a poaching liquid made with veg,water and wine,but i used perry cider instead,i think the ray/skate would taste even better poached in that, just to taking the flavours to another level,hope this helps mate,and keep watching,cheers .scott..happy fishing...

    Wow! All this time we've been throwing skates back in the water. Is it gummy like octupus or calamari? Is it "cotton like" like mullet? Is it mild like flounder or "fluke"? Is it heavy dense like blue marlin? Ate marlin twice. Both times got diarrhea. ..lol

    Gummy if undercooked. Otherwise cook it till so it comes clean from the cartilage and it's perfectly tender.

    @@chrish12345 Oh um I don't really think so because one of th big points about using bone is to transfer heat into the meat. I just dont think cartilage would do that well. That being said I love knawing on cartilage I would probably leave it anyway even if I would have to really scotch the cartilage to cook the meat. Damn I want one of those now.
