Pro-Tip. Only salt one side, then put it salt side down in the pan. Right befote flipping, dab the tops with a paper towel, then salt that side and flip. A few more steps, but a much better crust.

The most important thing about cooking scallops like this is buying the right kind. Wet packed scallops have extra water in then and won't brown easily. Dry packed scallops are the way to go.

Apparently where I'm from we have s specific species of scallops called Tasmanian Scallops, they have orange tails that are supposed to taste 100 times better than regular scallops. I'm not sure if you can get them where you are, but if you can they are certainly worth eating if they're cooked well.

@@alexjarman1268 regular scallops have the "tail" you speak of, it is just that it is discarded most of the time. It's called the "coral" and i believe it is the liver of the scallop. It is tasty, I've had it on scallops I've cleaned myself.

Also a pro: the room temp thing has been disproven. No need to let them sit out. Also, there is no need to put something as quick as scallops in the oven. Just leave them in the pan for the two minutes and then baste.

leaving it cold and putting in the pan tenses it up and makes it chewier, that’s a fact, never disproven, any actual pro could tell you that, which is why you wait for them to be room temp, oven is just to add texture, you definitely need more of an education with cooking before saying you’re a pro

No you deff can skip this. The residual heat from the pan is sufficient. I think since she's worked in kitchens this step is akin us using the salamander in a commercial kitchen right before service. They look great but yeah, you don't need to do this.

Yeah I worked as a food server in a 5 Star restaurant ranked #1 in my country and most of my time was spent waiting for the food in the kitchen and the chefs never put scallops anywhere besides a pan. Could be just as good tho and used more than I think

I’d skip the oven step. The heat from that hot pan will continue to cook them even after you take them out of it. Granted, I prefer my food as least cooked as it safely can be eaten.

If you buy them from a reputable fish market they should have a use by date on the container. If you are concerned about the scallops, ask the person who is selling them to open the container. When scallops are not fresh you will know it Immediately. Say thank you and walk out. You will be terribly disappointed if you cook them until they are tough (well done). Scallops are so delicate. Two minutes are plenty.

Growing up my mom would make special Top Ramen. Either beef or oriental ramen. Boil the ramen noodles on the stove until al dente. Strain. Put noodles back in pot. Add 1/4 cup of butter, 1/4 cup of milk and seasoning packet. Mix well then add veggies such as corn, peas and/or carrots.

@@SharpieTheBlack corn peas and carrots are in so many soups so that's not weird. The milk is a bit more odd for a soup, but it's used in a lot of sauces that are delicious. If you eat red curry or something like that's its basically soup with coconut milk instead of normal. So the concepts are not rare.

There's also the rule to not use metal on a non-stick pan to avoid scraping and scratching the teflon surface into the food. Teflon flakes cause cancer, so this is a very important step. You're using cast iron here I believe, so it's not at risk. Just worth mentioning to anyone reading who doesn't own cast iron or stainless steel pans, use plastic, rubber, or wooden utensils on your non-stick pan. Also, even cast iron can flake a bit of iron with more modern day, rougher cast pans, so do be careful there too!

I love your videos I’ve been cooking since I was in high school , took culinary as well and I just turned 27 I love your videos but sometimes you don’t really need to take advice from someone who says there’s a professional. You can get the same results for sautéing for 2 minutes on each side and at a low to medium heat.

If you need something random to make I recommend tuna melts! There simple and they make me happy. First I open a can of tuna and squeeze out the water, Then I add Mayo, Worcestershire sauce and dried chopped onion, I would give you measurements but I usually just eyeball it Then I toast a piece of bread Put the tuna on the toast, add a piece of cheese and put it in the oven until it’s melted! And boom you have just made a tuna melt. Sorry if these instructions are awful! :D

I never salt my scallops. It draws moisture out of the scallop while cooking. I start with a small amount of olive oil, have the pan hot but not smoking. Cook scallop for 11/2-2 minutes. If you can lift the scallops with no resistance turn the scallops and cook for additional 11/2-2 minutes, depending on the thickness of the scallops. When done cooking you can add butter if you wish. I like a crust on my scallops. If you’re concerned about whether it is cooked enough. It is probably done enough if you cooked it on both sides sides.

leaving it cold and putting in the pan tenses it up and makes it chewier, that’s a fact, never disproven, any actual pro could tell you that, which is why you wait for them to be room temp, oven is just to add texture, you definitely need more of an education with cooking before saying you’re a pro

I have never used an oven to cook a scallop. They cook so quickly what is the use of an oven. That’s like using an oven to sauté shrimp…..

No you deff can skip this. The residual heat from the pan is sufficient. I think since she's worked in kitchens this step is akin us using the salamander in a commercial kitchen right before service. They look great but yeah, you don't need to do this.

Yeah I worked as a food server in a 5 Star restaurant ranked #1 in my country and most of my time was spent waiting for the food in the kitchen and the chefs never put scallops anywhere besides a pan. Could be just as good tho and used more than I think
Scallops are literally the best seafood in the world. Sweet and amazing!
I’d skip the oven step. The heat from that hot pan will continue to cook them even after you take them out of it. Granted, I prefer my food as least cooked as it safely can be eaten.

If you buy them from a reputable fish market they should have a use by date on the container. If you are concerned about the scallops, ask the person who is selling them to open the container. When scallops are not fresh you will know it Immediately. Say thank you and walk out. You will be terribly disappointed if you cook them until they are tough (well done). Scallops are so delicate. Two minutes are plenty.

Growing up my mom would make special Top Ramen. Either beef or oriental ramen. Boil the ramen noodles on the stove until al dente. Strain. Put noodles back in pot. Add 1/4 cup of butter, 1/4 cup of milk and seasoning packet. Mix well then add veggies such as corn, peas and/or carrots.

@@SharpieTheBlack corn peas and carrots are in so many soups so that's not weird. The milk is a bit more odd for a soup, but it's used in a lot of sauces that are delicious. If you eat red curry or something like that's its basically soup with coconut milk instead of normal. So the concepts are not rare.

There's also the rule to not use metal on a non-stick pan to avoid scraping and scratching the teflon surface into the food. Teflon flakes cause cancer, so this is a very important step. You're using cast iron here I believe, so it's not at risk. Just worth mentioning to anyone reading who doesn't own cast iron or stainless steel pans, use plastic, rubber, or wooden utensils on your non-stick pan. Also, even cast iron can flake a bit of iron with more modern day, rougher cast pans, so do be careful there too!

@@AidenDe1 I know how it all works and how the Teflon can cause cancer, but that little from using a pan with a metal spoon won’t give you cancer. It’s more of a problem with with your pan cuz it will make it not non stick anymore

I love your videos I’ve been cooking since I was in high school , took culinary as well and I just turned 27 I love your videos but sometimes you don’t really need to take advice from someone who says there’s a professional. You can get the same results for sautéing for 2 minutes on each side and at a low to medium heat.

When I heard 500 degrees I was gonna ask if that’s F or C. And then I thought. “Wait a minute. What the fuck are we trying to do? Boil sulfur? That’s definitely in Fahrenheit.”
If you need something random to make I recommend tuna melts! There simple and they make me happy. First I open a can of tuna and squeeze out the water, Then I add Mayo, Worcestershire sauce and dried chopped onion, I would give you measurements but I usually just eyeball it Then I toast a piece of bread Put the tuna on the toast, add a piece of cheese and put it in the oven until it’s melted! And boom you have just made a tuna melt. Sorry if these instructions are awful! :D

I never had any seafood apart from salmon, tuna and carp( it's traditionally eaten at Christmas in my country, salmon is way better) and don't eat much meat, but the look so good!

I never salt my scallops. It draws moisture out of the scallop while cooking. I start with a small amount of olive oil, have the pan hot but not smoking. Cook scallop for 11/2-2 minutes. If you can lift the scallops with no resistance turn the scallops and cook for additional 11/2-2 minutes, depending on the thickness of the scallops. When done cooking you can add butter if you wish. I like a crust on my scallops. If you’re concerned about whether it is cooked enough. It is probably done enough if you cooked it on both sides sides.
