I've always cooked with the skin and the seeds ... unless I'm feeding someone who is very picky. I had read the skin, much like the potato, has all the vitamins, etc. Is that incorrect?

I don't know where this idea that eggplant is bitter comes from. I have been eating them all my life and have never had a bitter one. Neither I, nor anyone in my family has ever salted them. The only bitter eggplant I ever had were some I grew in my garden once. i think that might have been due to the growing conditions. The varieties sold in our markets and grocery stores are not bitter.

I agree with you. But when I come to Australia and found all the eggplant are bitter and we have to do some treatment like that. In China when I was young I saw some people to pick them from plant and eat them straight away no problem at all

That is true eggplants in Australia some times can be bitter
