When it's hot out, the time for cold tea is in! But what's the best method for making cold brew or iced tea? Today, the pros and cons of, and detailed instructions for, four different methods for producing the chillest, most refreshing tea ever.

    Is it possible that the "off" taste in the two iced methods is the ice itself? I saw you were using good water for the tea but I know ice sometimes is just tap water plus it can absorb tastes and solids from the freezer.

    I prefer the second method of using cold water to brew the tea. It gives a truely unique taste that is different from everything else. My favourite method is to use a lot of leaves, 2x-3x the amount of tea and steep it in cold water only for 5 minutes. This works especially well for Sencha and gives a very strong fruit and umami taste. You can do a second stepp for 1 minute and a third one for 2 minutes. It works really well in the office if you dont want to get up to get some hot water.

    Have you tried „shinobi cha“? You put leaves in your gaiwan/ brewing vessel and then put ice on top of the dry leaves. Let it melt by room temperature or outside in the garden. In the meantime I normally do sports and when coming back and showered I can refresh myself with a nice „ice melt“ flavoured tea.

    As summer is rapidly approaching I had to refresh my cold brew skills. Thanks again for this video. I found it really interesting how different you found hot/fridge vs hot/ice. Do you think that by making a concentrate the water became saturated enough that the tea could not fully extract properly? I cannot think of any other reason it would be that much of a difference.

    Hey, so, I cold brewed three teas- a black, a dark oolong, and a jasmine green tea. The first two turned out amazing! Mild and pleasant! The jasmine, however, turned out bitter. Why could that be? What do you recommend I do? It is a bitter tea to begin with, but I'm trying to cut down the bitterness and make it as mild as possible without compromising its strength. Thank you!

    Method 1 is perfect for your Gong Mei 2016: Brew it with 80degrees, let it cool down, put it into the fridge and wait a few hours. Leave the leafs in the tea until you drink it! The result is DELICIOUS and what a mouthfeel…! :)

    Ah, nice that you try it with the Gongmei! We did some cold brew experiments this week with Brian and tried also the method you describe, leaving the leaves in the fridge. It didn't work out well with the tea we used (a Dancong) but maybe we brewed it at too high temperature. We shall try again with 80°C. Btw, you are in Berlin, aren't you? I will be in town on September 11 for the Pop-Up Teahouse at C*SPACE, where I will give a tea tasting; are you able to join? It would be nice to meet and drink tea together.     @@nannuoshan I actually try a cold brew with all my teas. In general it is not so easy with Oolong and the result is (to me) more convincing with the green ones. I prefer white and black teas - BUT: I never use boiling water (can bring out some unpleasant notes), 70-80degrees is enough… Thank you for your invitation! I‘ll definitely join if possible!

    @@nannuoshan There's no doubt: The classic Coldbrew in the fridge is so much more aromatic with brighter fruitier notes. On Ice Gongfu is no option for me. Sometimes when there's little time I pour a bit of hot water over the leaves in the coldbrew bottle, wait for 30 seconds and then add icecubes and fridge cold water. So the coldbrewed tea is ready in 30 to 60 minutes. It's a compromise that works...

    @@gabrielezimmermann5946, glad that you share my thoughts about On Ice- tea. What do you mean with "classic Coldbrew?" Brewining in cold water or brewing it hot and then put in the fridge (named hot in fridge in the video)?

    I brew my iced tea in what you call the hot fridge method except I let it cool substantially before putting it in the fridge, to about body temperature because my tiny fridge overhears and then my food around the tea tends to spoil from being right next to it. I also admittedly only brew tisanes and herbal teas, which is probably considered a travesty by most tea snobs but I can’t drink too much caffeine. I also just leave the “tea” in the jar as because it’s not tea leaves I figure it’s fine. I do tend to leave the top off as it cools on the counter, otherwise it takes forever for it to cool enough to put it in the fridge. You didn’t explain why you wanted to put the cap on quickly but I assume so you don’t let some of the aroma and flavor escape (?), so I might just try capping it immediately and deal with it taking even more hours to cool. I will try the cold brew process as part of my aversion to tea leaves in iced tea is the bitterness and tannen that comes from the iced American style, which I just can’t tolerate, and I figured tea leaves sitting in water, even cold water, for that long would have a very dry and bitter quality to it, so I’ll definitely give that a try as well. Thanks for the video, even if I am seeing it two years out of date.

    Advisable to do a quick rinse (with boiling water) before transferring to tumbler with water and leave in fridge? I don't see you rinsing your teas in this video.

    We do not rinse for cold brew, but you can certainly do it before brewing with cold water. The brew will be different though, as the quick rinse with hot water will influence the substances that tge leaves release in water later on in the fridge.

    My tea tends to come out bitter. I don't use fancy leaves and I'm not a connoisseur but I think I will stick to the cold brew methods. I don't like my tea bitter lol

    I did... and I realized it while saying it 😀. Despites almost three years in the States, German is still by far my second language. So sometimes some German comes through as it is more natural to me to speak German than English.
