Ingredients
For the Squares:
225g (8 oz) butter, softened
225g caster sugar
4 large eggs
225g self-raising flour
2 tsp baking powder
1 tsp organic vanilla extract
For the Ripple Filling:
20g light muscovado sugar
pinch Nutmeg powder
pinch cardamom powder
1 tsp ground cinnamon
(Tool) 20cm x 20cm square tray pan - make 25 pieces
Ingredients
1. Preheat your oven to 160°C fan forced. Grease and line a 20 x 20cm square tray pan.
2. Prepare the Ripple Filling: In a small bowl, mix together the light muscovado sugar, ground cinnamon, nutmeg and cardamom powder. Set aside.
3. Prepare dry ingredients: In mixing bowl, mix together the self-raising flour and baking powder.
4. Make the Cake Batter: In a separate mixing bowl, beat the butter and sugar together until pale and fluffy.
5. Add the eggs one at a time, beating well after each addition.
6. Add Dry Ingredients: Sift the self-raising flour and baking powder together. Gradually fold the flour mixture into the butter mixture,
7. Stir in the vanilla extract.
8. Layer the Batter and Filling: Spread half of the cake batter evenly in the prepared square tray pan. Sprinkle the ripple filling evenly over the batter. Spread the remaining cake batter over the filling, ensuring it covers evenly. Use the skewer to create marbling and swirling effects on the cake before baking.
9. Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center comes out clean.
10. Leave to cool in the pan for few minutes before removing from pan.
11. Serve: Once cooled, cut the cake into squares and serve.

    Hello!!! 👋 yes you can, just make sure add 1tsp baking powder per 100g of plain flour to make them into self raising flour! :)
