    No wonder they charge double the price anywhere else does, he's wasting a good percentage. Seriously, iberico black label is at most $20 in Toronto, usually 60gram packs are $24, but a little more if it's cut fresh.

    That ham leg is not even close to 17 kilos. Probably not even 7... It does't have a black hoof either (so it's not the best quality). That ham they are selling at a really high price would be average/low in Spain. If they are trying to inform people about something they should inform themselves first.

    Your cutting technique is really, really bad, it must be way thinner and you take it with bread. I just watched a missed opportunity to really understand ham. Jamón ibérico is like Kobe beef and prosciutto is like the chicken from KFC, if you come to Spain just Avoid the tourist traps and try the other ibérico products too. And don't order paella unless you are in the eastern coast

    30 bucks an ounce, and 16 ounces in a pound. So 480 bucks a pound, and (assuming they're excluding the bone) at 37 pounds that's about... $17760 in profit from a 37 pound leg of ham purchased at $800 to $1000 Eeesh...

    Yes but that "profit" gets divided amongst everyones salaries working in the restaurant. Its not as if one person is profiting that much and you do not necessarily sell that leg very quickly.

    The funniest part its they are being ripping off. Im spaniard i can tell you 100% that its not an iberico ham. And its extremelly easy to know why. No black hoof, no iberico race. That is a common jamon serrano of duroc race, from 100 to 300€ at must becouse 5J its a good brand.

    The pigs are killed at 15min the old so the leg aka ham portion of the pig isn’t 37lbs…it’s only the ham that’s exceptionally priced the rest of the pig is more affordable.

    Just a tip to the motion graphics department, the "acorn" clip art used at 1:41 is almost definitely chestnuts. While chestnuts are super tasty, they are not the same thing.

    It is not pata negra, to be pata negra has to have a black paw and that jamón doesn't has it. Also expensive Spanish ham from the ibérico pork normally weights around 6 to 9 kg, because ibérico pork is a lot smaller

    comes with a hefty price tag, i brought home 2kg from a trip to spain, 200 USD. but well worth it, the one bought was not 100 % Iberico pig, but a mix of Iberico and Duroc, still a good ham, but in the future i will only get the 100 % Iberico, the taste is much richer than the mix, although it was also fed with Acorn, like the pata negra.

    Most expensive Jamón Bellota I ate was in Barcelona called Joselito Vintage which was cured for 60mths.... Joselito is the best & 5J second imo

    Jamón ibérico is not like prosciutto, it is similar to Jamón Serrano, more industrial but good nonetheless, ibérico is another thing it is súper premium, it means it is from a very small region and has only been feed with acorn. A real delicacy.

    100% Iberico pigs must also be free range pigs and the range must not have more than 2 animals per hectar. (that's about 2.4 acres, so each animal must have just over 1 acre to himself)

    If that is a Jamón iberico... Im japanese (Im born in Spain). Whoever can understand something about spanish food can tell by the colour and the fat vets is jamón serrano.(mid-low price you can buy by 70-150€ whole piece)

    The good and bad thing of iberico ham is that when you start the only way to stop is when there is no more left. Even if you are full and is the end on the dinner, you always can eat.

    You can buy pata negra from 5 JotAs (not jotEs) at Costco. It's so fatty, it coats your mouth in lard. Probably why they drink so much wine in Spain. It's amazing.

    I cut plenty of Iberian ham pata negra and I know for a fact that there is at least 1/3 of waste on the ham from all the trimmings that need to be done. If you a super expert you might be a able to make it less but it’s not usually the case. I do think he not cutting the ham properly and should watch some video on how to cut it properly to make the most out of it. J5’s is a really amazing ham and prociutto is not comparable to this product. We’re talking about completely different flavors and curing processes.

    They are over charging it and huge profit, they bought 37 pounds for 1000usd , which is $27 /lb, but they are selling it for 480/lb(30usd/oz). I guess it is limited in supply and marketing
