    You guys are great. I usually don't leave comments, but this video was very helpful. I always, tell my wife not to reuse oils after using it once, except coconut oil.     Loved the way you have put up things.. This requires lot of work and time.. I was looking for this information since long.. I have a question. If the oil reaches smoking point and is allowed to cool, will it regain its original structure and properties? How much difference would be there in the nutritional value? Please let me know.

Regarding your question - these reactions that happen at high temperatures, are irreversible and the molecules will not regain their original structure once oxidized. Nutrients like vitamin E are degraded at high temperatures. The key is to cook food at temperatures lower than the oil's oxidation temperature. Hope this answers your question.     @@SciencySoup You could try using a low band filter pass on the male audio channel; It will cut off low frequencies (80/120hz) that usually makes the voice incomprehensible. Some mics and recorders already include this option, if your sound recording system does not includes them, you can look for them in your video edition software. If you don't find the filter you can create it yourself using a Parametric Equalizer and cutting all the frequencies below 80 or 120hz.

    When you say don't reuse oil more than twice, does that mean we can use it a total of 3 times (the first time plus *reusing* it twice) or just twice in total?

    We should avoid refined oil but u r suggesting refined oil for deep frying. Coconut oil has high smoke point which can be used for deep frying.

    Suppose I deep fry with an oil and then cool and strain (to clean) and save it for reuse. When I deep fry with this used oil, how much lower will its smoke / oxidation point be, compared with the original oil? And a separate question: is there any need to be concerned the water in the food being deep fried is causing hydrogenation?

    Cleaning doesn't real clean it, just throw the oil away after an hour of max use.
