You shouldn't mix salt into your ground beef because it makes the patty less tender, for the best results season only the outside, Kenji Lopez did a video with First we Feast where he tested this and it proved that salt binds ground meat together. Feel free to add any other spices inside of your ground beef just avoid salt.

@@cumdinewitme He was a professional chef in a restaurant. I think he has a lot of great knowledge to share it's just that much of old culinary knowledge is redundant its just that up until now noone cared to actually interpret the science behind it.

From personal experience, I definitely agree seasoning your burger on the outside gives the best result. The patty tastes more like a steak, whereas mixing salt and other spices to your meat before cooking it gives you more of a meatloaffy, sausagey type of texture which I dont like 😬

Also you'll need more salt to get it to taste salty enough, bc you don't immediately get that flavor on the outside

J. Kenji Lopez Alt says you don’t want to salt the meat all the way through because it makes the texture harder and rubbery throughout, instead for forming a nice a crust on the outside. The salt drives moisture out and makes the proteins denature more.

I used to make them like that and they turn out tough and flavourless. I either roll balls and smash them into the grill or pan, or use a burger press. The sear and texture is where all the flavour is not necessarily what you put into the meat.

Looks good, I just smash em with a spatula but yours do look nicer. Though when I smoosh my burgers the scrungly ends cook faster and taste good, it’s sorta like the cheese that escapes the quesadilla if that makes sense.

my restaurant has an awesome local source of grass fed organic free range (you name it) beef and we make 4oz patties. i trust the source fully so i love to cook mine rare/mid rare. i bet these chonky babies grill up nice and slow for a great sear but still rare or medium inside
