At 0:39 - I love that chord you play after the B-7, for the Bb7, really ties the tune together! I cant tell if I like substituting the diminished before the one, however, it is kinda interesting which is needed for that long Gmaj... but seems a little jarring at the same time.

Yes. E7 is a substitute for Bb7.
