    My older brother works in a place that makes these cakes and they wash their hands after every step (gloves aren’t used cause they can gather bacteria and could get lost in the mixture) as a requirement all hair on arms are shaved (at least at the one where my brother works) and if your making these cakes you don’t make anything else for that day other people do (my brother literally just makes these cakes all day while he’s at work) so everything is a lot more sanitary

    G B short fingernails is a must for kitchen staff. You can see that he has clean and short nails. Plus he will bake the cake at 160C which is hot enough to kill most of germs and bacteria (most bacteria causing food borne illness die off above 60C)

    Watching the dude fearlessly pour ingredients with no evident system of measure is blowing my mind. The confidence is staggering. My mom made damn sure I knew how easily baking projects could go wrong from mismeasurement, so seeing this guy just do everything by feel? Incredible.

    It's not by feel. The bowl was on a scale the whole time, and he was adding ingredients up to a certain weight each time. He must have had the numbers memorized, or else he was looking at a list that was out of sight of the camera.

    To people who complain about gloves, come on guys, there's nothing to worry about. He will bake the cake at 160C which is hot enough to kill bacteria (most germs and bacteria causing food borne illness die off above 60C). And if you are work at professional kitchen short fingernails, shaved arms, and cleaning your hands regularly is a must since it's SOP. You can't mix chocolate batter and meringue with mixer because it will deflate. The only way to get those fluffy texture is folding it by hand

    I use to be a Baker and the are so many cakes and pastries we have to bake by hand so we always had to be sanitary this guy was in all aspects and now I'm a nurse I have a Korean patient and his daughter brings these cakes and they're delicious and they are clean people and they love people from all races and nationally so that's all I have to say 😊😊😊

    You can usually tell a chefs cleanslyness from their chefs coat or apron. He has nothing on him. You try mixing a giant bowl like that and get nothing on yourself. And you can't fold egg whites in a Machine it'll knock all the air out. The egg whites are what make it jiggly in the first placr.

    Simz Zxy that clear liquid in the beginning is def some kind of oil, it’s got the look and consistency and you’d need it for this kind of cake

    It's all about the amount of love you put into a food that give's it it's soul and taste. Sometimes in cutting, prepping and stirring you have to put some serious Chi into your effort and the food ALWAYS benefits, so if someone is getting in there with their body to make your food better all power to them!
