Hot & Fast Ribs On A Yoder YS640
Тәжірибелік нұсқаулар және стиль
On this cook I see if it's possible to cook a rack of St. Louis style ribs Hot & Fast with a pellet smoker. I've cooked numerous racks of ribs Hot & Fast on my Gateway Drum and also on my Pit Barrel but never on my Yoder pellet smoker. Well, it can be done and I was really pleased with the results!
I used my homemade SPG along with the Heath Riles Cherry Rub and oh boy were these ribs tasty!
Thanks for watching!

Love the shirt! I wish my dad was still alive. He would have worn that shirt every day. Great video and something I want to try on my pellet grill. PS, I would enjoyed the video more if you said “guys” about 50% less often.

Hey Klaus! I'm a Chevrolet guy but Dodge trucks are nice, especially the power wagons.👍🏼
Good video. Try including times and temps throughout the cook not just after done. You mentioned competition multiple times...curious, which ones you’ve won? Thanks again. 👍🏼

I cook my ribs at 275 - 300 the entire cook. I entered 3 competitions in 2018 and did really well in 2. Lets just say I took home $1500.00 at one of them. 😁
Love this video. I've subbed. Can u do a review of the yoder? Trying to decide between that and the rec tec bull. I like the wifi option on rectec. But I like the searing option and build quality of the yoder. Do u think the comp cart is a must?

Absolutely I can. It's a machine and I highly recommend it.
How do you keep the sugar from burning? I cook on an offset smoker and my ribs always seem to get a little too dark. Normally cook 2-3 hours unwrapped and then 1 hour wrapped

I love my offset smoker and just picked up my first Yoder. The offset does not have a heat defused plate like the Yoder, so what I like to do on the offset is put the ribs as far away from the flame as possible, put a water tray closest to the flame and sometimes I hook a piece of foil in front of my ribs to protect the ribs from the flame. I use a lot of brown sugar in my run and that seems to help me a lot. I also spray the ribs every 45 min or hour. Hope this helps. I usually run my offset 250-275.
Where did you get the black upper shelf grates from?
@SmokinJoesPitBBQ

I ordered my smoker with them but you can order it from All Things BBQ.
I owned a Traeger timberline for two months and sold it. Got a Yoder ys640 and it’s so much better. The ys640 is in a different league.

@SmokinJoesPitBBQ

It's really good! If you smoke at 225 you get a really good smoke flavor. You will at higher temperatures as well but 225 is the magic temp for good smoke. 👍🏼
Does he have the diffuser plate in or out? It’s hard for me to tell

JOE I HAVE A TRAEGER KINDA FOUND OUT WORKS BETTER IF YOU TURN UP THE HEAT STARTING AT ABOUT 250-275 . 250 FOR FIRST HOUR LIKE YOU SHOWED AFTER ONE HOUR LET REST THEN REMOVE FOIL WRAP THEN IN SMOKER ANOTHER HOUR. THEY CAME OUT GREAT! THANKS JOE FROM PASTOR BILL LITTLE (PEQUEÑO) OKLA CITY OK
I’m a KCBS Certified Judge and I do my ribs exactly how you do yours Except I brine my ribs lightly and my ingredients are are different when I wrap them. I use agave syrup instead of honey. And I paint the back with BBQ sauce.
Please do a hot and fast brisket cook on the yoder 640. 👊

I cater BBQ for individuals , and families. I can testify that I get ribs done in 5 hours. From start to rest There is no need to cook ribs 6 or 7 hours.

@benjismith593
5 жыл бұрын
@@SmokinJoesPitBBQ yes. At 3 n a half hours at 275. Baby backs are the preferred my customers want. At 3.5 hours I sauce/add moisture/honey/brown sugar/wrap for naked in foil. Throw them in my stove at 300° for an hour. Unwrap, resauce, and into the delivery pans they go. Vertical offset 260 to 300 ° at times. Stick burner home build.

@SmokinJoesPitBBQ

Hey Andre, the Yoder cooks really even. I use the top shelf for any cooks over 250 degrees. I use the bottom shelf for pork butts or even a brisket when I cook at 226 or 250. Good luck with your smoker, you're going to love it. Vacuum up the ashes before every use. 👍🏼

Hey, Joe man that was mighty fine looking ribs. You made me want to use my yoder again, which I had a great time cooking on. Your ribs looked mouth watering, the pull back was right on point. I wanted to go out side a cook me a rack of ribs, because you made so hungry. Joe your clarity of your videos is outstanding. I really enjoy your videos Joe keep then coming brother. Good Job Man.
