Welcome back to my channel! On this cook, I compare different ways of wrapping ribs. I've cooked ribs all 3 ways displayed on this video in the past but never all at once. All 3 wrapping styles work and they're all really good. On this cook, the ribs wrapped in butcher paper were tender, they looked good and they were really nice & moist too.

    Hi there it's really great to meet you and cheers for Montreal Canada. Really enjoyed this and what a great comparison between the three types. I got to be perfectly honest I like a smokey hint but not too heavy so I would probably go in the end with your choice for the butcher paper as well just for the sake of having a bit less of that presents but the juiciness as you described and you really did it well because I'm quite hungry right now and in a bit of a state of panic LOL. you really do have a fantastic presence on here and I'm definitely looking forward to seeing more of the Futures I saw your comment on a couple of my friend's video so I came by to check you out and definitely was a pleasure and always great to connect with good channels doing great things on here.     Cool comparison Joe! I usually do foil or naked and every so often do butcher paper, I agree with you on the results. Just depends on how I feel, sometimes I really like that smoke flavor.

    Excellent job my friend. Question, how do you keep the yoder so spotless? Maybe a video about the not as glorious maintenance/upkeep of your pit? Just an idea. Keep the vids coming, loving the content.

    thank you for the side by side and assessment.also note for those who didn't grow up with just unwrapped meats it helps to not sauce at all till they are resting,and they will need about twice as much spritzing or mopping than our modern wrapping technique calls for.btw the amount of smoke we can see shows you are learning your Pit,good ol Pepito is growing into Pepe

    All three looked terrific and delicious. Wouldn't you know I'd be the odd ball in the comment group. I don't like over smoked anything. I'm sure it's because I didn't grow up eating smoked meat. A little goes a long way for us. I'd go with the butcher paper. I've used both foil and paper and like the paper better. I never saw an offset smoker or knew what one was until almost 3 yrs ago. Your new Yoder pit is very nice, and looked like it just idled thru that cook like saying ah man come on and load me up. lol Nice video and good looking ribs brother.

    THANK YOU for this vid. This is actually, EXACTLY, what I’ve been looking for! I’ve seen a couple vids saying ribs don’t take on any more smoke flavor after they reach an interior temp of 160°F-165°F. Indeed, most pitmasters seem to wrap at right about that point (at lease those that actually take a temp). If true, then at that point the ribs should be wrapped ASAP, otherwise we’re just losing moisture. I’ve done it, and I was more than satisfied with the smoke flavor, but based on this test, I’d say they’re half right; the ribs can still take on more smoke flavor, but they also lose moisture. Something I learned from you is wrapping in paper also yields more smoke flavor. Just a theory, but perhaps the paper provided an opportunity for more smoke to penetrate the wrap whereas the foil created more of a wall. If wrapping in foil, why put them back on the smoker? Just fire up the oven. D@mn! Now I gotta get me some butcher paper! 😊

    very interesting Joe. I use butcher paper on my Briskets but never pork ribs. that said I do use BP on my beef ribs, I think. lol ill give BP a go in the future. thanks for doing the work. good stuff as usual.

    Joe thanks for the mention. I love that mist bottle. It’s no surprise to me that butcher paper won, cause it allows moisture to still pass through while maintaining the integrity of the bark. Nice comparison and you could totally see the color differences between the 3.

    You can but probably less than the foil. I've actually used a brisket mop in butcher paper. 👍

    I don't really have a favorite either way. Just depends on the cook. Growing up we never wrapped. If had to pick it would be upwrapped. I think you get a better bark. But to me they all looked great bro. I wouldn't turn any of them down. 😁

    I’ll stick to no wrap and some foil sometimes.. Mexicans love foil you walk in the kitchen the burners got foil 🤣.. thanks for the review .. Heavy smoke flavor is bomb I’ll have to try butcher paper sometime

    Hey joe, nice ribs I generally don’t like to add sauce while I cook ribs. If I use sauce I add it after, butI must admit they look appetizing though. What flavor profile is the sauce? Use the rib tips for cooking a pot of whistle berries.lol

    LOL!!! The flavor is a little bold, smokey not sweet like lots of bbq sauce. It isn't thick which I absolutely love. 🤘

I have never used butcher paper on my ribs but I am going to give it a try. Those ribs I will say had some serious meat on them, and those victory lane rubs were awesome. AWESOME JOB JOE.     I would tear up any one of those rack of ribs. Great comparison video. I agree it seems I get a juicier rib with butcher paper than foil. It seems to be that here in the PNW we like less smoke flavor and more seasoning flavor.

    Hello Louis! Thanks for watching my friend.👍🏼 I noticed that different regions have different flavor profile preferences. I've traveled to different places around the US and Texas by far loves the heavier smoke flavor, so does Missouri. I had some ribs in Denver at a BBQ joint and they used a 5 spice ribs on their ribs that was pretty good. 👍🏼

    Did that butcher paper have the wax on one side? If so, any concerns cooking with it, ie gets into the meat product?

    Hey Marty! They did have a smokier flavor which I absolutely love. The YS640 is an amazing smoker for ribs and although the flavors are close, nothing beats the flavor of an offset smoker. 👍🏼
