Pete's the best. Or at least the most well adjusted member of the family. That's why they can't stand him, everyone else is broken in some way. Great reaction guys, only now catching up!

Everybody needs an Uncle Jimmy and a Pete. Wow, Carmy barely knew his father.

In the pan Sydney preps for the mash are milk and a bouquet garni (and possibly butter or oil but they could be added to the potatoes separately) which is just a herb bundle used to infuse sauces, stocks, soups etc. Putting warmed seasoned milk and fat into (riced or mashed) potatoes of the same temperature helps make them smoother. Really enjoying these reactions!

The restaurant Carmy worked at in NYC, Eleven Madison Park, is a three Michelin star restaurant that was in fact rated the best restaurant in the world in 2017.

Uncle Jimmy is not actually Carmy's uncle, just a close friend of the family who was business partners with Carmy's dad - they call him "uncle" in the same way they call Richie "cousin" even though he is not related to them.

Tina and Richie are afraid of change because they probably think they can't keep up or won't be good enough to do the job. Sometimes change is a good thing after the fear has passed. Great freaking reaction!

Pete is absolute stand-up guy, but the family never gave him a chance to stand up. When given the opportunity though, he's just there being e'rybody's support like he was born for it.

Tina just needs some time to come around, and realize that Sydney isn’t being ‘tough’ to mess with her, she’s trying to run a tight ship. Not personal, unlike when Tina was “hazing” Syd before.

Tina is just so defensive and was so territorial cause she's been there for a long time and a woman, so she's up all in her head, me thinks.
