Cocktail Buns Dough Ingredients:
Bread Flour 300 g
Sugar: 60 g
Salt: 0.5 g
Dry Milk Powder: 10 g
Custard Powder: 10 g
Rapid Yeast: 5 g
Lukewarm Water: 150 g
Whole Egg: 45 g
Unsalted Butter: 30 g
Put all the ingredients (except the butter) into a bread machine, wet ingredients followed
by the dry ingredients.
*Knead until all ingredients come
together
* Add The butter
* The dough should be smooth and elastic
1st round of proofing, double in size(about an hour)
Fillings:
Unsalted Butter: 150 g
All purpose Flour: 70 g
Dry Milk Powder: 75 g
Sugar: 60 g
Salt: 0.5 g
Shredded Unsweetened Coconut: 30 g
Roll into a long tube.
Divide into 12 equal portions.
Toppings:
Unsalted Butter: 15 g
sugar: 5 g
All Purpose Flour: 10 g
Whole Egg: 10 g
Sesame Seeds
Deflate and divide the dough into 12 equal portions. Knead into ball shapes.
Cover with cling wrap, let rest for 15 minutes.
*Roll out each portion of the dough
into an oval shape.
*Wrap Fillings
* Transfer to a lined baking tray with seals facing down.
Repeat this step with the remaining dough portions and fillings.
Cover with a plastic wrap and let them proof for about 45 to 60 minutes,
or until doubled in size.
Lightly brush whisked eggs on the surface of each dough. Pipe two lines of toppings
and sprinkle some sesame seeds. Baked in a pre-heated oven at 180C / 356F,
for about 13 to 15 minutes, until golden brown. Remove from the oven and let cool on a wire rack.

    +Hexus Ziggurat It is not hard to make, but just many steps, please try to do it when you have time. But I strongly recomend to buy a bread machine to knead the bread dough. Thanks : D

    Does the flour and water measurement will be different if I use stand mixer? I follow your ingredients it come out very wet.

    Tks for your fast reply as I had made a few type of bread in evening time and kept in a container but the next day morning I felt the texture is not as soft as last night.

    Hello! Where can I find 奶粉(milk powder). I don't really want to buy the big tins of milk powder. Is there smaller packs I can buy just for baking? I live in HK. Thanks. :)

    Suzy, i got the carnation Milk powder from walmart in VA here....I m sure HK has the small package of milk powder too....Those Carnation milk powder is in small bag as well... Please double check and let me know.....:)

    Interesting you put the butter after the dough is ready. What’s with the powder milk when you can just use milk from a carton.

    Powder milk will add milky flavour without adding liquid to the dough :)
