食材份量 Ingredients
高筋麵粉450克 Strong flour 450g
酵母12克 Yeast 12g
糖35克 Sugar 35g
米糠油或菜油20毫升 Rice bran oil / Vegetable oil 20ml
適量白芝麻 Handful of toasted white sesame seeds
10克吉士粉 10g Custard powder
六份一茶匙鹽 1/6 tsp salt
湯種水份120毫升 Utane dough: 120ml water
麵團水份150毫升 Bread dough: 150ml water
餡的材料: Filling ingredients:
無鹽牛油140克 Unsalted butter 140g
糖70克 Sugar 70g
椰絲70克 Desiccated coconut 70g
全脂奶粉50克 Milk powder 50g
鹽六份一茶匙 1/6 tsp salt
吉士粉10克 10g Custard powder
低筋麵粉10克 10g Soft flour
雞尾包的白油: Cocktail bun decoration paste:
無鹽牛油45克 Unsalted butter 45g
糖10克 Sugar 10g
低筋麵粉25克 Soft flour 25g
雞蛋一隻 1 egg
(打勻,搽上飽面上) (beat well, egg wash)

Mama Cheung, 1st thank you for this recipe. It brings great joy to my heart! This was my Father's favorite bao. It was the one thing he would always get whoever we went to chinatown. My father passed in 2009 and this recipe brings a lot of memories with my Dad and me, thank you.

Thank you Mama Cheung. Cocktail bun is one of my favorite but it is too expensive in Los Angeles, US$2.50 to $3.00 a piece (very tiny ones - 2" to 3" by 1.5" to 2", and even worse, it almost has no filling). So I will try to learn from you, although the procedure is complex. Thank you again.

Does anyone notice the salt for making the dough mentioned earlier has not added into the dough in the making?
焗爐出嚟即刻食都算軟熟,但係第二日食,麵包變得硬身,甚算噴咗水擺入微波爐叮20秒,仍然比較硬身,有其他方法嗎?

I'm will try to make it this weekend. I was kinda confused when you said there was coconut in the filling but in the video, you didn't mention or put any coconut in there. Not sure if anyone picked that up.

Lan Voong You can put the coconut at the end or before you start to mix the fillings, but I guess the custard too much that make the filling too sour which not taste liked coconut bun, may be instead of custard put more flour and half tsp of vanilla. (This is only my idea you can try both see which suit your taste.)

Replace it with cornstarch - the same amount and add a tsp of vanilla essence for taste. That's how I do it.

你好👋這個是餡的材料之一,不可以用液體奶代替,沒有奶粉,唯有不加便是,味道較淡些,如不介意的話,不用都可以的,謝謝支持😊👍💕

我按足份量和材料, 也按足流程, 酵母也用水和糖發酵成功為泡泡水了, 醏母應該是好的, 但做完前期程序後等兩小時,它並沒有發成兩倍大, 我直接隔一個晚上, 還是只有倍半左右, 和妳發的大大的很不一樣, 最後分割的時候按80G一份,只能分到9份不到,現在還在等它放焗爐發烤15-20分鐘, 應該也不會發大多少了.. 不知是那裡出問題了

你好👋袋面要寫著白色(white strong flour )高筋麵粉,否則啡色的是麥粉,所以要看清楚便不會買錯了,謝謝支持😊👍💕

你好👋多謝關心!麵包機10多年前我已有一部了,但在視頻同大家分享做麵包,要顧及到不是每個人,家裡都有部面包機,所以便用手來搓粉,示範給大家看,其實我每天早上,都是吃自己做的面包,發覺用手搓的包很容易,出來效果很好,所以都愛用手來搓粉做麵包,謝謝支持😊👍💕

你好👋通常伴好的餡料,放入雪櫃,都是為了包餡的時候容易些,所以不用放入冷凍格,冷藏便可以,但想快些達到目的,有時我都會放入冷凍格,但時間便不可太耐了,否則過硬反而不妙,大約15至20分鐘便可以了,謝謝支持😊👍💕

你好👋用乾酵母放入溫水中,然後放入一茶匙,一齊攪溶成為酵母水,作用是令麵糰膨大,而令到焗出來的麵包體鬆軟,謝謝支持😊👍💕

麵包百份比例,麵粉100%時,酵母係1 至1.2%(以速酵母計), 450粉 4至5g速酵可以啊,如果鮮酵就12g量
麵團的份量中有1/6 tsp salt,請問要在什麼時候加入麵團?謝謝你。

你好👋我相信不是廹爆問題,而是包餡後,收口拿捏得不夠緊,下次做用少許水塗抹收口地方,這樣會黏得緊些,同時發包時,包與包之間要留3/4空位,這樣焗出爐的包才會大和靚,排包除外,謝謝支持😊👍💕

你好👋用廚師機搓麵糰,祇要將所有材料,一次過放入機裡,按搓麵糰程式,完成後取出來從發麵糰那部份開始,跟著做接下來的部驟便可,謝謝支持z😊👍💕
