Junzi Kitchen, a fast-casual Chinese restaurant, has grown from its first storefront at Yale University to three stores in Manhattan, New York since 2015. Lucas Sin, the chef of Junzi, which means integrity, talks about how Chinese food deserves a role in the evolution of an ethnic cuisine renaissance in New York.

    Thank you for acknowledging chayotes are from mexico! I am from mexico and i grew up eating chayotes in stews.

    FpMID Yes. This chef is the product of a free society that values cultural diversity. Meanwhile in mainland China, you have a totalitarian government capable of wiping out tens of millions of people and sterilizing indigenous cultures.

    FpMID Calling freedom protestors “roaches” is dehumanizing, much like the Nazis did to their prisoners and victims. And nowhere did I accuse you of thinking like a CCP - I was raising an example to make a point, just like you were. Learn to read and think critically before resorting to cheap name calling.     Chinese food isn't fast food style. Chinese tend to sit down with our whole family and eat and chat over dinner. Eatting duration is often longer than usual.

    True, but he has to adapt to the American trend if he wants to succeed. His restaurants in NY clearly caters to young professionals/ students who want to have authentic and affordable yet trendy Chinese food, but don’t have all day to sit down for a proper multi-dishes meal during a short lunch break. This kind of restaurant is very popular in NYC for this very reason.

    But they definitely will appeal to Americans. I can see the effort they tried to put into the menu. But sadly it was more of a fusion n modern hk style. I do think the Korean there will like it too.

    I think there are indeed fast Chinese food as well as the sit down ones. Working in Shanghai, you can get fast ones like the cold noodles, similar to what we saw in this video.

    well, as least one "Hong Konger" of a younger generation is embracing his "Chinese (food) culture"....... one of the most ignorant and ridiculous comments I've heard so far from westerners was "Hong Kong people speak cantonese, they ain't Chinese"...... bizarre!!! they better reconsider to include "Hong Konger" or Cantonese as an ethnicity group in all government forms here in the UK...!!!

    I agree. Pretty much everything is stir fried and greasy. Nice to eat once in a while but not everyday.
