    If you want to cook or make wine the BEST person to learn from is this guy!! He needs his own TV Show. Please don't edit out mistakes. All these other cooking shows and videos are PERFECT and everyone knows we all make mistakes. It makes the video more personal to leave the mistakes and mishaps in. Excellent job!

    Lockdown on kangaroo island where all the jobs BURNED AWAY and then Covid happened so... lots of us are struggling to provide ourselves with simple luxuries we used to take for granted (like booze) we simply can’t afford it. Yet so many fruit trees survived in back yards. Trade culture is resurfacing out of necessity and i look forward to trying to make this so my street can have a drink again 😊

    I used organic raisins (that were a couple of years old) to make sourdough starter after I watched your video on making starter three ways. It took off right away and was very active. So if anyone tries it I recommend using organic raisins. (I didn’t buy organic on purpose-it was what they had at Costco. 😉)

    I think I'm broken. This was the most amusing video I have ever seen. I've never seen someone so passionate about something and look so annoyed that they have to teach it.     I have always bought yeasts for brewing, seeing how easy it is to cultivate your own I don't think I will buy them ever again. Thanks for showing us.

    yes some natural yeast is highly prized for its activity and ability to ferment to high abv. the up side to buying yeast is you know what strain you have and what flavors it and abv it should give. if you brew with a bought yeast strain you can wash it after fermentation and dry or propagate in a liquid and keep a known strain that you like without having to buy it again.

    Thank you so much for this . I was looking for an alternative to commercial yeast sold here. I happened to find out that the industry 'enhances' the yeast with soy lecithin , that I want to avoid at all costs. Now I have another DIY assignment on my hands. Thank you for it 🍇

    Making yeast from raisins like this is still perfectly possible, though I've always done it by keeping the raisins in the water. The addition of a small amount of sugar may be helpful if it needs a boost, but in my experience the raisins on their own are typically sufficient.

    @@testey7215 are you sure? I use box raisins for yeast nutrient when I make mead and it doesn't seem to impair it at all when it's working-off.

    @@testey7215 You can simply dry your own grapes- just hang regular store bought grapes up in the driest place in your home. I suspend mine from cotton and hang from a nail on a shelf. They are raisins after a couple of weeks or more and then you are guarantee no sulphites. If you're worried about pesticides buy organic.

    @@ryanidrees4218 How long is a piece of string ? In my personal experience it all depends on various elements like, the season and the temperature in your home, natural sugar in grapes, the "bug count" etc. As the sugar is eaten by the "bug" there will be less bubble and thus less yeast. Best is to experiment and keep track of your findings till you fond the right "recipe" for your conditions. It is worth investing the time. Good Luck !!!

    Thank you very much for this video...I'm in Italy and when lockdown started we could not find yeast in the shops. I found your sour-dough starter experiment using the money and since have been baking bread every week with your starter recipe. I also shared it with my sister and mother in South Africa who also bake with your starter. Your experiments is helping us through these tough times and we compare our breads and results -bringing us closer even though we are far apart. Now we can also start making drinks and share a glass of pineapple wine or ginger beer using your recipes. WELL DONE and GRAZIE MILLE Maestro!

    I've made wine for decades without buying yeast. The natural yeast on the grapes is enough to make wine. The problem now for me is that I no longer have control over the growing of the grapes so I have to use yeast.

    Carlos Arenas I end up in the emergency room from throat closing because they left the peel one when they made the wine. I have a wine executive friend that I asked and this was his answer as to why I have a reaction.

    Thanks for the info. I got one question Do i need to wash the grapes before squeezing? Some other videos they don't recommend washing tge grapes because by doing that you get rid of the wild yeast attached to the grape skins!!

    If it is small guantidy yes you wash but you have to wipe after so there is no water. If the quantidy is big there is no need.

    @@mbt360 صديقي انا عملت نبيذ عسل كيلو نص عسل و 3 لتر ماء و كاسة زبيب عنب، الخميرة المستخدمة عملتها من مزج 5ملاعق عسل و كم حبة زبيب مع كاس ماء بزبدية وكل يوم حركهم وغطيهم بقماشة لغاية بعد يومين لما تحركهم تسمع صوت غاز يطلع متل صوت الكوكا كولا لما تنسكب وهك صار معنا خميرة طبيعية، الزبدية بما فيها ضفتها لل مزيج يلي هوي:كيلو نص عسل و 3 لتر ماء و كاسة زبيب ، النتيجة كحول 13 بالمية

    Not arsenic, they contain an organo cyanate. Large quantities need to be consumed for a toxic effect.

    Lori A person would have to eat a whole bag worth of appleseed to be toxic. One jalapeno pepper has a more detrimental affect on the human body. It was once explained to me that if hot peppers were make today, rather than having been used for centuries, that they would be registered as a toxic by the US Food & Drug Administration. Peppers cause increased salivation, nasal secretions, & eyewatering, irritation to human tissue, increased sweating, & the pepper should never touch mucous membranes or the eyes in humans. Hot peppers would be listed as gastrointestinal my toxic & should have the same labelling as chlorine bleach. But since everybody already uses peppers, the population won't buy the scare tactics. If you eat chili, you're probably doing more to your body than the half dozen apple seeds that might be in an apple. And the core hazard has nothing to do with the risk of any cyanide poisoning. The opaque white stiff structure that encases the seed in an air pocket is considered by some to be a potential choking hazard. So the warning about the core is double duty. If people are coring the apple, there is an even less likelihood that they might ingest the seeds of the fruit. Think about it. Animals eat plenty of apples from orchards. Your never hear of people crying their dog died from eating the fallen fruit. Chocolate is more dangerous to your dog than Apple seeds. Also, people throw their apples into compost bins, seeds & all, & there's no news flash of deaths due to cyanide comtaminated compost. Also, Apple juice & cider producers don't bother to peel & core apples before dumping them in the apple press. Juice comes out through a spigot & is usually very cloudy. After pressing, the solids that are still in the press, mash is removed before mire bushels are thrown in. Mash, that is peel, core, & seeds are often fed to farm animals or thrown in compost. It's amazing anyone is still alive being that .govs weren't able to inform us of all of the dangers the world has to offer until relatively recently. It's a miracle the human race isn't extinct for cryin' out loud. I'm guessing your cityfolk. To stay on the save side, & to exacerbate your socially engineered sense of paranoia, avoid the seeds & vores. Peace.

    Apple seeds are also loaded with vitame B17, one which is hard to find and it kills cancer cells. One apple a day, incl. the seeds, keeps the doctor at bay 😉

    I got to know one thing today that this raisin or apple or any kind of wild yeast can tolerate only upto 4-6% abv after that they die. So this yeast is not good if you want high alcohol level. Edit- may bad, i checked it again and raisin has wild yeast called saccharomyces cerevisiae and got alcohol tolerance of 13-14 %

    S. cerevisiae is also the yeast on apples, and apples ground up and pressed and allowed to ferment naturally-cider-typically ferment to 6-8% just from the yeast that lives on and around the fruit (and with the addition of sugar, this can be pushed to about 10% or higher). It's the same yeast, though different strains (which may be subspecies), as what ferments bread, wine, and beer.

    The bread needs to rise 6 hours or more. I made one yesterday with yeast made of ginger and it went very well but it needs a lot of time to rise enough. I see you are using balloons as well. Learned it yesterday. I don't think an airlock cant be cheaper

    Fermentation is a new kitchen hobby I started recently in January 2021 (I'm now extracting fruit enzymes, making wine etc), & I have discovered that grapes are the most "active" & by that I mean I see lots of bubbles which even make a sound... no wonder from your videos you have used grapes as yeast in some of your wine making, & even in this video, it is the first one to start fermenting out of the 3 bottles... Wow, I enjoy learning new stuff. Thanks for sharing
