Follow this simple step by step video to enjoy this delicious Lamb Biryani on all your special occasions. Lamb Biryani is traditionally eaten as a main dish with raita and chutney, the deep intense flavour of the biryani will want you coming back for more.
Lamb Biryani is a firm family favourite, and is eaten on special occasions such as Eid, parties or just whenever you want.
This is my Homemade Lamb Biryani recipe, a take on a special dish made for the Mughals, the ingredients are detailed below for my Lamb Biryani.

CLARIFIED BUTTER RECIPE: • How To Clarify Butter ...

INGREDIENTS:
1 kg lamb on the bone cut into medium pieces (I used shoulder of lamb you may use whatever cut you prefer)
1 cup of clarified butter (desi ghee made using salted butter)
3 cups of basmati rice (750g)
3 large onions finely sliced
4 large fresh tomatoes finely diced
1.5 teaspoon salt & chilli powder
1 teaspoon turmeric powder & coriander powder
1 & half frozen peices of ginger & garlic cubes
3 bay leaves, 2 cinnamon sticks, 4 black cardamom pods, 4 green cardamom pods.
1/2 teaspoon black peppercorns & whole cloves
1 tablespoon cumin seeds
4 bullet chillies (optional)
1 cup natural yoghurt
Fresh coriander & mint
Less than 1/4 tspn of deep orange food colouring (mixed with warm water)

Made this last night... What an amazing biryani ! My girlfriend reckoned it was better than any she had ever had in a restaurant or takeaway, so many thanks for sharing this with us 😊. Took me aot longer than 15 minutes to reduce the liquid but I think that is because I was pretty nervous about turning the heat right up and catching the bottom of the pan. Worked out nicely in the end though and only added around 20 extra minutes. Can't wait to try some of your other recipes !

This recipe is amazing. Very easy to do and you get top biryani. I've done it 4 times now and I have memorised the recipe. BTW: I don't use food colouring, instead I add a small amount of turmeric to boiling water with rice and that gives very nice yellow rice colour.

Traditionally, saffron was always used in biryani before people started replacing it with artificial food colouring.

Add saffron to warm milk to get the color instead of adding turmeric while boiling rice. Am an Indian and that’s what we do 😊

Hello - finally got round to making this last night , just as good as you said it was! The flavours are amazing! Quick Q , The first bhuna stage, your desc says 10-15min took about an hour for me? Doesn’t matter mind. I used full fat yogurt- does that make a diff? Thanks again 😀

Nice! Love trying new Biryani. We also make a layered biryani in South Africa and use sour milk instead of yogurt. Saffron is essential in Mums recipe and marinate the Lamb overnight. Will be trying your recipe, it looks delicious. Masha Allah!!!

Hi Elizabeth, thanks for your comment. You could subsitute the clarified butter with any type of cooking oils like, coconut, rapeseed, canola or any other. Regarding the yoghurt, you could try using coconut, soy, almond or cashew based yoghurts, although I have never tried them so am unable to comment on how it would turn out I'm afraid. If I was trying it out, I would maybe reduce the quantity of the ingredients by half and try a smaller amount to see if it firstly works, rather than go straight in with a large amount. Hope that helps! 😊👍

Blitzed Green chillies, around 1.5 tablespoons would be sufficient.

Hi Selina, I'd say the rice was par boiled for around 6/7mins, no longer but again please bear in mind different brands make take less or more time. The one I used took approx that long. Enjoy and thank you 😊👍

You could but a biryani is known for its layers of colours through the dish and that's the reason why it's added on to the top so it seeps through..
When u put it in the oven what number did u preheat it at ?

Hi Rimmi F, the oven was set to 185 degrees Celsius which is the same as Gas mark 5 or 365 degrees Fahrenheit (°F). Hope that helps! 😊

Absolutely. You can substitute each frozen cube with 1 tablespoon of the paste or puree.
