    Would LOVE the fish sauce and soy sauce recipes. Also your shrimp paste. With the pastes (e.g. the Thai curry paste) and the salsa Verde, could you please let us know how long we can keep it, and how?

    Great some fermentation stuff coming up. Salsa verde I keep for 3 days in the fridge then stick it in the freezer. Curry paste can stay in the fridge forever but also freeze if you want for longer than ever.

    I liked when you sprayed the working surfaces down I have been trying to educate people in the art of sterilising everything with a 3 per cent of hydrogen peroxide. also the slower the drying the better the product. so fuck off the dehydrator.

    I dry at 65-70C for 6-8 hours. Will there be a difference if you dry it for 24 hours at 35C?

    It will have a cured dried texture rather than cooked.

    Keep it in the fridge or freezer. It can sit at room temp for days but you run the risk of mould.

    Fish and garum is the same thing yes. Mine is made with fermented fish guts and trimmings from seabass and salmon. It’s got an interesting story to it. I rented out my kitchen to one of the top 20 restaurants in the world so they can do an event. They wanted to throw away about 50kg of fish guts and trim from 60kg fish. So I took their perfect “waste” and turned it into a few products I still use to this day. This was 4 years ago))))

    Can I use a beverage refrigerator for a curing chamber? You know, the ones at the grocery stores getting you to buy all those shitty, sugary drinks with the window in the door? Or does it have to be light tight? I'm gonna make a biltong box outta birch or red oak, maybe walnut, I'm not sure but the biltong boxes are kind of different from a curing chamber, or am I mistaken here?     It’s best make a box or cage like I mentioned before of you live in a place with naturally dry air. If you live in a very humid place I always recommend a simple dehydrator. We use them in some of the kitchens I manage because of space and they work great. Lowest setting around 30C and you have biltong in 2-3 days. Drinks fridges or any other fridge glass or not will work but take longer as the air is cooler but still dry. If it’s an old fridge that don’t work you essentially have a box. To use it you need to ventilate it by either drilling two wholes(one bottom one top) or leave the door open slightly. On both occasions you would put a little fan inside continuously running. This could be a computer fan or small desk fan. Anything to make the air move. Leaving the door slightly open is obviously the easiest but only doable if the environment is completely sealed off so no flies, insects, little hands or whatnot can get to it. So each method has its plusses and minuses depending on how you interpret it and heavily depends on the climate and space you find yourself in. Hope that helps!

    @@PantsDownApronsOn Yeah I'd definitely outfit it with the necessary components to move the air, provide a bit of heat, and screens to block of the possibility of insects. I'd basically use all similar stuff to what you have listed. Thanks for the reply and if I ever get the chance to go to Moscow I hope I run into you! A Biltong and vodka vacation sounds superb. 🤣
