    Love it! Wish we could afford duck breast in SA, not even to mention turkey breasts. Watched a video about making cold sliced deli meat with turkey and then looked at the prices in SA and realised we are not in the US or UK where turkey is a holiday staple. Next mission is to make ostrich pastrami.

    Ek smaak dit kwaai! The garlic and paprika works well! With your biltong video you made use of bicarbonate soda to prevent mold. I did not see you use it in this video, any specific reason?

    I don’t always use bicarb. It’s more suited for larger cuts that can benefit from the tenderising effect plus the larger cuts sits in the vinegar for longer which needs a bit of balancing and also using a dehydrator you won’t have problems with mold. So bicarb is basically a “use when you see fit” ingredient.

    I raise and butcher Muscovy ducks. Their meat is a bit different than mallard-based breeds. Have you worked with it? Any alterations you might suggest?

    The only thing I would do is to add a bit of clove to the spice. Works well with the more gamey taste.
