Here's everything you'll need for the most delicious Pecan Praline Ice Cream:
For the ice cream base -
600ml double cream
50g pecans
100g sugar
4 tablespoons of water
2 egg yolks
pinch of salt, if desired
1/2 teaspoon vanilla extract
Pecan Praline -
50g pecans
100g sugar
4 tablespoons of water
pinch of salt

Help, please! When I go to a site for converting grams to ounces or US cups, I get the answer that 50 grams is only 1/4 cup. That amounts to about 20 medium-sized pecans, a truly puny amount! When you spread them out on the parchment and then divided them in two, the smaller section appears to have about 30, so those you left whole would be about 40. I have absolutely no idea what to make of the disparity. Since writing that, I decided to eyeball the measurements for the pecans, but then ran into another measurement issue. 100g of sugar converts to about half a US cup BUT that was way too little to brown in 4 Tbs of water after a reasonable amount of time, so I ended up adding another half cup. Given all that, I respectfully suggest that you review the measurements you posted. Thank you very much for posting the pralines portion of the recipe. I don't make ice cream with eggs and no one else dealt with the pralines.
Can ordinary dairy cream be used instead of double cream?

Yes, single cream could be used instead. It just might not be as creamy, it'll be a little thin and watery i assume! I haven't tried it but let me know how it goes :)
