🍴🍴🍴🍴🍴🍴🍴🍴🍴
✅Ingredients
• 1 pound dried navy beans
• 1 pound diced bacon
• 1 medium yellow onion diced
• 2 bell peppers diced (red and green)
• 2 cups ketchup
• 2 cups beef broth
• 2 tablespoons Worcestershire sauce
• 1 tablespoon apple cider vinegar
• 1/4 cup brown sugar
• 2 tablespoons ground mustard
• 1 tablespoon smoked paprika
• 1 teaspoon garlic powder
• 1 teaspoon salt
• 1 teaspoon black pepper
✅Instructions
1️⃣ Place navy beans into a bowl or pot and fill with water until covered. Let beans soak 12 hours, or overnight.
2️⃣ Drain and rinse soaked beans and then place into a clean large oven-safe pot with lid. Fill with water to cover once again and bring to a boil over high heat. Reduce the heat to medium-low and let beans simmer 1 hour, until beans are tender. Once cooked, drain well and return to pot.
3️⃣ Preheat oven to 300 degrees Fahrenheit.
4️⃣ Add uncooked diced bacon to the beans along with onions and bell peppers. Stir in ketchup, beef broth, Worcestershire, apple cider vinegar, brown sugar, ground mustard, smoked paprika, garlic powder, salt, salt, and pepper
5️⃣ Bake, covered, in the 300 degree oven for 3 to 3 1/2 hours.
Don't have an oven-safe pot? Transfer the bean mixture to a 9x13 pan or 3 quart casserole dish. Cover the pan with aluminum foil and bake as directed.
Want to use canned beans? You can use four 15-ounce cans of navy beans instead. Drain and rinse well. Skip steps 1 and 2 and add your rinsed beans in step 5.

This is certified good! My mother had a recipe exactly like this except in addition to the bacon, she added some molasses and well seasoned bulk sausage formed into patties she baked in the oven using a cast iron dutch oven. For several hours on low heat.

I have been making my great grandmother's recipe since I was 15. I used to use dried beans, but now when I make this for a family get together, I have to make a lot, so I use cans of beans. I like to mix it up and use Great Northern beans, chili beans with spicy gravy &, black beans. I have to double the amount of bacon that I use because there is one family member who doesn't like beans, but always snatches at the pieces of crispy bacon on the top sticking out of the beans! (You know who you are, Suzie! 😄) I also use all of the other same ingredients, and I love smoked paprika. I have tried to use hickory liquid smoke, but only a very little bit because if you go crazy with it your sauce will be bitter. And, of course, double the chopped sweet onion. I have made huge baking dishes of this for get-togethers, and it is always gone by the time I am ready to leave. All I get to bring home is an empty dish. 🙄 I think that all families use a basic recipe but like to change it up from time to time. This is a great recipe with very little ingredients. Thank you!

I have this is the oven as I write and we r eager to try it. I have T1D & need to estimate my carbohydrates so I can dose my insulin properly. In case it can someone else, I estimate the recipe is about 23-24% carbohydrate by weight. So for 100g serving, that’ll be 23-24g Servings are often given in CUPS, and store-bought beans suggest 1/2 cup weighs 130g. 130 x .23 = ~30 grams of carbohydrates. YMMV

Omg talk about a sugar and salt bomb. I should have known when I saw 2 cups of ketchup lol... man. Next time I'll swap out all the ketchup for no-salt-added tomato sauce and cut out about half the salt and sugar. It was overwhelmingly sweet and salty. Added tomato sauce and water to dilute it and make it more tolerable.

Do not recommend pouring straight from the bag. You want to sort the beans to remove damaged beans, dirt, and rocks. Afterwards, rinse then beans then allow to soak.
