Ben used the tungsten filament bulb to get the heat directly onto the food. Because if the food is not in good contact with the walls of the container, warming it in a waterbath or something won't work really well. If the glass is really passing infrared idk.

The "nasa" freeze dried ice cream packets that used to be available looked like dried cardboard but tasted pretty good.

That's what triggered this project: We bought some "astronaut ice cream" at the museum recently and the kids asked if we could make it at home. I'm picking up some dry ice tomorrow morning to give it a shot.

Does the manufacture of this tool still use a refrigerator compressor for cooling?

The newer version does, yes. The old version used a dry ice bath but this was too expensive to use on a regular basis.

is there a way to do this without having to buy something like dry ice / ethanol every time you use it?

Kinda! Check out a later video in this series. I rig up a chiller to cool the ethanol rather than dry ice. It works much better and is far less expensive. kzread.info/dash/bejne/aYtlo5SIhpCxZso.html

It's a really delicate process. I've built an infra-red heating rack that helps a lot: kzread.info/dash/bejne/hKp-ybivac6-d5c.html
