Thanks! The wheel is from Japan and the housing was created by a dear friend of ours!

Hi, we used a couple in progression but the dark stone seen is a Jinzou Aoto whetstone. It's very versatile and can have a ranging grit between #2000-4000. bernalcutlery.com/products/jinzou-aoto-man-made-2000-4000-medium-fine-whetstone-w-natural-grit

Do you guys re-etch the Damascus knife after thinning it ?

We did not on this knife as it was a customer’s workhorse and not requested but with acid etching and/or natural stone progression it’s absolutely possible.
