Auguste Escoffier left behind a legacy still enjoyed by professional chefs everywhere. He invented some 5,000 recipes, published Le Guide Culinaire textbook and developed approaches to kitchen management. Culinary institutions and famous chefs around the world continue to teach his recipes, techniques and methods.     There are many videos on KZread that are full of hyperbole. As a chef of over 40 years experience, I can tell you now that every word on this film is true. Escoffiers influence on our eating habits world wide cannot be overestimated.

    Bonjour, j'ai découvert la grandeur de Monsieur Escoffier et je suis étonné qu'il n'y ait pas une vidéo en Italie qui se souvienne largement de lui. Nous, les Italiens, devons beaucoup à ses enseignements et il aurait été bien qu'il soit rappelé non seulement par ceux qui travaillent dans la restauration ou par ceux qui étudient à l'école de cuisine, mais par tous les Italiens.

    Auguste Escoffier is also credited with codifying the complex recipes of Marie -Antoine Careme. I believe it was Careme who created the 1st mother sauces. They were later consolidated to 5 mother sauces.

    Comparing AE to Steve Jobs in unfair. SJ was a visionary and a businessman, for sure but he was neither a technician or organiser. AE was all of that. And AE would probably never have employed anyone with visible tattoos or at least kicked them out had he become aware of them.
