Autumn has given way to winter. Outside the snow is falling softly, the garden is quiet, the kitchen smells of cinnamon and orange. It's getting close to the most exciting time of the year. Time to slow down and enjoy the simple pleasures of the season. I share with you some early winter moments and an orange pumpkin jam recipe that blends the atmosphere of autumn and winter. It makes the perfect Christmas gift.
Orange Pumpkin Jam🍊
Ingredients:
• 500 g pumpkin, chopped
• 300 g sugar
• 1 tsp cinnamon
• 3 tsp maple syrup
• 1/4 tsp ginger
• pinch of nutmeg
• grated zest and juice of 1 organic orange
• juice of half an organic lemon
• 2 tsp jam fix (optional)
1. Peel and seed the pumpkin and cut into small cubes.
2. Bake the pumpkin cubes in a preheated oven at 180°C for 30 minutes until tender.
3. Once the pumpkin is cooked, place it in a pan and add the spices, sugar, maple syrup, orange and lemon.
4. Bring to a boil over low heat and cook for 15 minutes starting from the boil. Stir constantly because it will burn quickly.
5. Mash the pumpkin pieces with a fork but if you want a more homogeneous consistency you can mash them.
6. Pour the hot jam into dry sterile jars and place in a dry container until cool.
Orange Pumpkin Jam Muffin🍪
• 250 g flour
• 1 tsp baking powder
• 1/4 tsp baking soda
• 100 g brown sugar
• 100 g melted butter
• 1/2 cup milk
• 1 tsp vanilla
• 1/4 tsp cinnamon
• 1 egg
• juice and zest of 1 organic lemon
• 2 tbsp orange pumpkin jam
1. Mix the dry ingredients in a medium bowl.
2. Pour the wet ingredients into the dry ingredients.
3. Place the dough in the moulds.
4. Bake in a preheated oven at 180 degrees for 20-25 minutes until golden brown.
