Minotaur sucks on Brutal. Try to stay in the air a lot, dash around. Only land when it's absolutely safe (Minotaur is between attacks, no acid platforms) or when there is a stray for blood. You can jump on the Minotaur's back, and if you stay airborne back there it really can't get you.

a few tips from someone who forgot where dem beans are: = use the new red variants = sawtrap = stay airborne. seriously. a lot of the -minotaur's- attacks can be avoided by bonking your head against the ceiling. = ensure you get arthritis by spamming projectile boosts and rockets = do NOT forget your railcannon exists hope this helps! if it doesn't... uh. um.
