INGREDIENTS + NOTES
#1 Rice Cake Brownie Bars 0:54
170g pitted dates (6oz)
10 brown rice cakes (70g = 2.47oz)
1 ½ tbsp natural peanut butter
1 tsp vanilla or a few drops vanilla aroma
2-4 tbsp water, added 1 tbsp at a time
a pinch of salt
2 ½ tbsp unsweetened cocoa
for the ganache:
1 ½ tbsp vegan butter (measure cold)
1 tsp vanilla or a few drops vanilla aroma
2 tbsp maple/agave/date/rice syrup
1 tbsp unsweetened cocoa
→ yields 1 6-8inch (15 -20cm) brownie pan
#2 Pumpkin Pie Mousse 3:30
250g (8.8oz) roasted pumpkin (or canned pumpkin purée)
2-3 tbsp maple syrup, to taste
3/4 tsp pumpkin pie spice OR: 1/2 tsp cinnamon, 1 dash of cardamom, pinch of each: nutmeg, cloves, ginger, black pepper
1 tsp vanilla
pinch of salt
3 tbsp vegan cream/cuisine
80ml (1/3 cup) aquafaba, optional: add 1 tsp cream of tartar
→ serves 4
→ serve mousse with added cookies, or granola
How to roast pumpkin:
Preheat oven to 190C, grab 1 small hokkaido pumpkin, cut in half, deseed, place on baking sheet with parchment paper, roast for 40-45 min or until cooked through, make sure it doesn’t get too watery in the oven , remove skin once cooled.
#3 Apple Oat Cupcakes 5:19
2 tbsp Chia seeds
240ml non dairy milk (1 cup)
1 tbsp white wine vinegar
60g coconut oil or vg butter, melted (1/4 cup + 1 tsp)
1 tsp vanilla
80g applesauce (1/3 cup)
60g coconut/brown sugar (1/4 cup + 1 tbsp)
1 1/2 tsp baking powder
1/2 tsp cinnamon
¼ tsp salt
130g spelt flour (1 cup + 1 tbsp )
100g oats (1 cup)
2 1/2 tbsp cornstarch
1 medium apple, cubed
oil or muffin liners for the molds
→ yields 12 cupcakes

serve with: nut butter, vegan yogurt or
Coconut Cream Cheese Frosting:
60g coconut oil (1/4 cup + 1 tsp)
250g vegan cream cheese (8.8 oz)
2 tbsp vegan cream/cuisine
pinch of salt
½ tsp vanilla
2 ½ tbsp agave/maple syrup

#4 Apple Bark 8:30
125g dark chocolate (4.4oz)
125g soft dried apples (4.4oz)
a few heaping tbsp peanut butter
1-2 handfuls almonds
dash of cinnamon
generous pinch of coarse sea salt
→ keep in the fridge for up to 1 week, in the freezer for up to a few!
#5 Mini Cinnamon Rolls 9:56
for the dough:
1 1/2 tbsp hot water
1 tbsp cold plant based milk
2 tsp vegetable oil or melted coconut oil/vegan butter
1 Tbsp agave/maple syrup
1/2 tsp dry active yeast
40g spelt flour (1/3 cup), plus a bit extra for the surface
1 tbsp vanilla protein powder
1/2 tsp baking powder
pinch of salt
dash of cinnamon
a drop of oil for your hands
for the filling:
1 tbsp cashew/almond butter or regular plant based butter
1 tbsp sugar (i used coconut) + 1/2 tsp cinnamon
2-3 ramekins, lightly oiled
→ yields 2-3 mini rolls

OKAY UPDATE !!! I made the rice cake brownie bars and... i finished HALF OF THE WHOLE THING IN 1 SITTING. im not even kidding. This is soso good. Shocked that half is gone in one day but i think it was worth it !! If you where hesitant i suggest you make it !! Also i used coconut oil instead of vegan butter in the ganage and it was perfect, also used date syrup as my sweetener! Its genuinely too delicious
ahhh I cant explain how much I love these little dessert recipes- especially in the autumn 🍂

I'm not vegan myself but I find that many plant-based recipes are just good to have in my arsenal. Most of your recipes aren't overly complicated and I struggle with staying on task with food preparation, so your channel has been a big help to me. I might try the pumpkin mousse tonight!
The coziest most calming Fall vibe while baking and creating! I might make these desserts but I’m here for the aesthetics and just company to see the treats that I want without me doing any work. I have dates & pumpkin but need to grab everything else, first!

That pumpkin is also called a mini red hubbard or red kuri squash, it's very sweet for a squash
The rice cake brownie seems like something i would really enjoy, i'm gonna give it a try. Also i would highly recommend pick up limes' frozen yogurt recipe ( i tried the one with berries which i swapped for fruits of season), it has got to be my FAVORITE HEALTHY DESSERT RECIPE OF ALL TIME.
I would be happy if you added more random bookclub elements in your videos, I think I would enjoy them 🙃

I’ve been having such a sweet craving this month this video has come at the perfect time ❤ Update: made the brownies, I even added some very dark chocolate for some pizazz, (I roughly halved the recipe as I didn’t have many dates left) and MINA!!!! Wow sooo many great recipes, I love the "healthier"ones! Would love to see more naturally gf bakes here as well :) And PLEASEEEE keep the book talk coming or even expand it - I always love to hear u talk a bit more personal stuff, also little q&a sequences and stuff. I really like THG and wasn't so sure about the prequel (I thought maybe it's just money making, u know) BUT I recently watched the trailer and it absolutely caught me! Why can't I use baby food for pumpkin moose recipe? / gen I'm not sure if I can find pumpkin puree in my country :( only as baby food

i did not travel with them, but they do seem sturdy enough to me! maybe wrap them in parchment paper before putting them in your lunch box

Edeka, Rewe and organic store always have them, sometimes discounters like Netto, Lidl have them too! Penny has cheap soy yogurt also!

it's butter vanilla baking aroma! i love using it cause you only need a few drops, and it tastes super intense, plus and it's cheaper than real vanilla , super common in german grocery stores :)

can anyone recommend a not too sweet but also not bad tasting vegan vanilla protein powder? i'm really struggling to find one that isn’t either too sweet and artificial tasting or too flavourless-ish kinda gross idk😅😂

I really like the MyProtein ones! I find both the Pea and Soy protein powders not too sweet and really nice vanilla flavor! They have a bunch of flavors as well :)

the one by the brand Naduria tastes amazing! the vivolife vanilla ritual powder is a close second for me

true, but whenever I tried using the baby food in my baking, it it would always taste kind of off? The roasted pumpkin tastes super nutty and almost sweet compared! And since you're using so much of it in the mousse recipe, I fear the outcome won't be so good with the baby food. Unless you know about some killer baby food brands then feel free to leave some recs haha 💚

@@Mina_Rome Aaaah, that IS indeed a valid point! Thank you for explaining! Problem is, baby food pumpkin puree is steamed or cooked pumpkin mash, whereas homemade pumpkin puree is baked and all the good nuttiness comes from roasting, so I see, you are right, won't use baby food🫡😆

Sweetheart absolutely none of that was healthy. You used oil in literally every recipe. Instead of oil you should have made a cornstarch slurry, heated it up till it becomes sticky and use that as a substitute. If you want a coconut flavor coconut flakes work just as well. You are a decent cook but you have much to learn before you can call your recipes healthy.
