Homemade almonds/hazelnuts praliné (50-50%) without Thermometer.
Another way to make praliné at home.
The recipe is super easy! no need to have a thermometer.
First of all, toast the nuts in the oven at 175°Celsius for 10 minutes.
In a saucepan caramelize the sugar (without adding water) three times until it becomes caramel.
Remove the caramel from the heat, then add nuts to it, stir, let cool then mix in the blender until you have a paste.
N.B: Pay attention to your blender, do not mix the ingredients at once!
