HARIO SWITCH RECIPES - Sweetness and Acidity Forward - Brewing Coffee at the Race Track

Brewing Hario Switch at Laguna Seca Raceway and discussing Eastern and Western coffee styles with my friend Jason who is from Taiwan! Also features my relatively portable black coffee setup with the Pepe Hario switch, Kafatek Monolith Flat Max, and the GOATED Cafec T90 Medium paper filters.
Jason's Recipe (Eastern Style) :
15g 92-94C (1:16) Medium Fine Grind
Standard Hario filters
70g steep for 30s and open
170g steep and open at 3:30
Sweetness and body forward. More balanced.
My Recipe (Western Style) :
20g 94c-98C (1:16) Fine Grind
Cafec T90 Medium filters
60g steep for 60s and open
100g at 1:15-1:30s (open)
100g after 2nd pour mostly drains through ~1:45
Acidity and clarity forward. More bright.

    Hey Brian, I think you had a typo in the second recipe. Shouldn’t it be 160g for the last pour?

    Thank you for the fun video and these recipes! When he mentioned the clicks he is using on the C40, was he at 30 clicks on a normal or red clix? I know it’s a long steep time so maybe that accounts for the coarser grind but I was just wondering 😅

    @@twfob thank you for replying! Did you say you were at 30 clicks for your recipe? I don’t know if I’ve ever ground at the setting, need to give it a try!

    @@AsCitiesBurn32 yes I used 30 click on light roasted for switch. And for water hardness , I use 80tds.

    Brian, what burrs do you have in your flat max? I have the sweet burrs in mine and I absolutely hate them.

    SLM. Maybe you need to season more? SSW supposed to do well in 1:2.5+ world, but also depends on what you're brewing!
