Couple of questions. How does he get the flour to stick so well without putting the chicken in egg wash first? Secondly, how does he evenly cook all the chicken when the fryer is so full and how does it not all stick together?

When you wash and clean chicken there is still water left in the bowl drain unless you properly drain it so that is the adhesive for the flour. And he covers while frying so it steams through chicken. He takes the ones out at the bottom which allows the ones that are left in to properly crisp up.
