Hi mate, can you tell me do these switches have to be wired to a specific polarity or does it not matter which way it is connected.

Hi Andy, There is no polarity on these push buttons. Most gate systems will use a passive (non-powered) circuit that is triggered when the button is pushed and completes the circuit. As long as the two wires are connected to the right terminals on your motor, it will work, regardless of which wire is where.
